Nothing I love more than an easy grab and go meal. Especially in the mornings, I never feel like cooking in the mornings. These are so easy to reheat and taste amazing. With the kids home for virtual learning, mornings have been crazy around here. There just is not enough time for cooking but I still want everyone to have a healthy breakfast! How To Make Roasted Red Pepper & Spinach Egg Cups

Like I said before these egg cups are a cinch to make! Start by gathering your ingredients. You want to make sure and spray your muffin slots with a nonstick oil to avoid the eggs sticking to the pan. Whisk your eggs together and season with salt and pepper to taste. Divide your eggs and toppings evenly into your muffins slots. Bake, let cool, and enjoy!

Freezer Friendly 

One of the reasons I love these egg cups so much is because they are freezer friendly. Follow recipe directions. Let egg cups cool completely then transfer them to a baking dish. Freeze for 2 hours, then remove from baking sheet and place in a freezer-safe bag. They will store in the freezer for 1-2 months. They can be easily warmed in the microwave, air fryer, or oven.

Ingredients

  • 12 eggs, large
  • 1/4 cup diced roasted red peppers
  • 1/2 cup diced baby spinach
  • 1/2 cup cheddar cheese
  • salt
  • ground pepper
  • nonstick spray

Instructions

  1. Preheat oven to 350 degrees, and spray your muffin cup slots with nonstick spray.
  2. Whisk together 12 eggs in a mixing bowl and season with salt and pepper.
  3. Evenly distribute the eggs into your muffin slots.
  4. Evenly distribute the cheese, spinach, and roasted red peppers among your cups.
  5. Bake for 25 - 30 minutes or until the middle of the egg cup is set.
  6. Remove from oven at let cool before removing, enjoy!

Notes

To avoid these Egg Cups from sticking, make sure to spray the pan well with a non-stick spray. Use a butter knife to scrape sides for easy removal.

Chicken thighs are so juicy and flavorful, even baked in the oven. These Asian Glazed Chicken thighs produce the best juices when you cook them, it creates the best tasting sauce. I absolutely love the way these taste out of the air fryer it leaves such a nice crisp exterior and keeps juicy inside. If you don’t have an airy fryer you could also make these in the oven or stovetop too!

For this recipe I used boneless chicken thighs, it works best for this recipe. Truly this Asain Glazed Chicken Thighs recipe is one of my favorites! Yes, you can bake or airy fry these chicken thighs. Personally I prefer the air fryer for the crispy char it gives the outside of this chicken however baked is just as delicious!! To get a nice char when baking these Asian Glazed Chicken Thighs broil for 5 minutes.

Asain Glazed Chicken Thighs

These Asain Glazed Chicken Thighs is a quick throw together dinner with the best honey soy sauce. They can be made in the oven or the air fryer.

Prep Time 5 minutes

Air Fryer time 18 minutes
Total Time 53 minutes

Ingredients

  • 1/4 cup soy sauce
  • 2 tbsp avocado oil
  • 1 tbsp sesame oil
  • 1 tsp crushed ginger 
  • 5 garlic cloves, minced
  • 4 tbsp honey
  • 1 tsp sriracha
  • 1 tbsp apple cider vinegar 
  • 2 and 1/2 pound chicken thighs, boneless and skinless
  • green onions, diced, for serving

Instructions

Air Fryer

  1. In a medium bowl combine soy sauce, avocado oil, sesame oil, ginger, garlic, honey, apple cider vinegar, and sriracha.
  2. Reserve half the sauce for later use. Add your chicken to the remaining sauce in the bowl. Coat the chicken and let marinate for 30 minutes to overnight.
  3. Preheat the air fryer to 370 degrees.
  4. Remove chicken from the marinade and place it in the air fryer basket, may need to do this in batches.
  5. Cook for 18 minutes flipping halfway through.
  6. While the chicken is cooking heat your reserved marinade in a small saucepan on low for about 2 minutes. Use the sauce to glaze the chicken thighs.
  7. Serve with green onions, enjoy!

Baked

  1. In a medium bowl combine soy sauce, avocado oil, sesame oil, ginger, garlic, honey, apple cider vinegar, and sriracha.
  2. Pat chicken dry and trim excess fat. Transfer chicken to marinade bowl and let marinate 3 hours to overnight.
  3. Preheat oven to 425 degrees F.
  4. Transfer chicken to a baking dish or cast-iron skillet with the marinade. Bake for 30 minutes flipping twice so the top does not dry out.
  5. Broil for 5 minutes to char the edges of the chicken.
  6. Serve chicken with the sauce it's baked in over some rice and veggies. Garnish with green onions, enjoy!

Stove Top

    1. In a medium bowl combine soy sauce, avocado oil, sesame oil, ginger, garlic, honey, apple cider vinegar, and sriracha.
    2. Heat a large skillet over medium-high heat and add 1 tbsp of cooking oil. Add the chicken to the skillet and season with salt and pepper. Cook chicken 3-4 minutes per side, or until cooked through at 165 degrees and brown on each side.
    3. Pour in the sauce and coat the chicken, let it come to a simmer and thicken.
    4. Serve chicken with sesame seeds and green onion, enjoy!

These flavorful juicy turkey burgers are some of the best I’ve ever tasted! Made with 6 ingredients these will be your new favorite turkey burgers.

I can not believe how fast the summer has flown by! We are getting ready for the kid’s school to start this week. This also means my schedule will be spread very thin! They will be starting off at home which means I now will step into the role of teacher on top of everything else! It’s somewhat overwhelming but we will manage, day by day, am I right?

Luckily I have pretty much mastered the 20-30 minutes easy and delicious dinners. These Juicy Turkey Burgers are one of my favorite go-to dinners, especially when I just don’t know what I want to make or feel like there is nothing to eat in the fridge, ha! The ingredients in these burgers are simple, but they pack so much flavor.

The kids had no idea these patties were packed with zucchini. 

How to make Juicy Turkey Burgers

  • Combine ground turkey and shredded zucchini. Simply add both to a medium bowl and combine.
  • Add spices, the spices blend so nicely in these burgers and the flavor is incredible.
  • Shape patties, this can easily be done by rolling patties into six same size balls then flattening them our using the bottom of a measuring cup.
  • Cook stovetop in a large skillet browning both sides, 8-10 minutes. 
  • If you choose to grill these burgers they will have the great char taste! To grill freeze burgers 10 minutes prior to grilling, this will help burgers keep the shape. Grill patties 8 minutes, flipping once.

Easy Chicken Salad

This chicken salad is the absolute best. Made with delicious chunks of chicken, veggies, fruit, and nuts. This salad has so much flavor in every bite and is truly a favorite around here. 

This easy chicken salad stores perfect in the fridge and goes great in sandwich rolls, croissants, and over a bed of greens for a low carb option. I’ve made it with grapes before but the apple offers enough sweetness and the dried cranberries balance out the sweet with a little bit of tart. In every bite, you get a little bit of everything, and it’s honestly so dang delicious!

If you are looking for the ultimate way to eat this chicken salad I highly recommend you serve it in a soft or lightly toasted croissant with a little lettuce, yum! If you are not of fan of dried cranberries you can swap them out for halved grapes. To make this salad lighter you can use half mayo and half greek yogurt, however, do not use all greek yogurt it won’t taste good.

This chicken salad is the absolute best. Made with delicious chunks of chicken, veggies, fruit, and nuts. This salad has so much flavor in every bite and is truly a favorite around here. 

Prep Time 10 minutes

Ingredients

  • 2 cups cubed chicken breast, rotisserie works great
  • 1/3 cup avocado mayo
  • 1 cup diced apple, 1 apple I used gala
  • 1/2 cup diced celery
  • 1/3 cup dried cranberries
  • 1/2 cup walnut pieces
  • 1/4 cup diced yellow onion
  • 1/2 tbsp lemon juice
  • salt & pepper to taste

Instructions

    1. If using raw chicken breasts, preheat the oven to 400°F. Rub both sides of chicken breasts with avocado oil, salt, pepper, and garlic powder. Place chicken on a baking sheet and bake for 25 minutes or until the internal temperature of the chicken reaches 165°F. Roughly cube or shred chicken. Alternatively use rotisserie chicken, I find this the easiest way.
    2. In a large bowl combine the chicken, mayo, diced apple, diced celery, cranberries, walnuts, onion, lemon juice, and mayo.
    3. Season chicken salad with salt and pepper. Cover the bowl with plastic wrap and refrigerate the chicken salad for 1 hour, serve cold.
    4. If making chicken salad sandwiches, slice each croissant in half and layer with green lettuce, and a scoop of chicken salad to each sandwich. Or serve over a bed greens with your favorite salad toppings.

Chicken Fajita Casserole

This Chicken Fajita Casserole is the perfect easy weeknight dinner that is packed with flavor. This casserole is loaded with juicy chicken, fajitas, melted gooey cheese, and tons of spice!

 This is such a quick and easy weeknight meal! The best part is this is a one-dish meal, easy and quite effortless for the flavor it packs! Chicken fajita bake is pretty much fajitas with half the work traditional fajitas take. This is a simple and delicious meal idea the whole family can enjoy.

Easy casseroles dinners are a busy mom’s dream. Not only are they delicious they are easy to clean up. My kids both loved the chicken and well ate some of the fajitas. But hubby and I cleared out plates! I served it with rice for the family, and for myself, I kept it low carb with cauliflower rice.

Chicken Fajita Casserole is the perfect easy weeknight dinner. This casserole is loaded with juicy chicken, fajitas, melted gooey cheese, and tons of spice!

Ingredients

Chicken + rub

  • 2 large chicken breast, split lengthwise ( or 4 small chicken breast)
  • 1 tsp cumin
  • 1 tsp garlic
  • 1 tsp chili
  • 1 tsp salt

Fajita Mix

  • 16 ounces mini sweet pepper sliced, or use 2 bell peppers sliced
  • 1/2 white onion, sliced
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp oregano
  • 1 lime, juice of
  • 1 cup shredded Mexican cheese, can sub pepper jack or favorite cheese

Instructions

  1. Preheat the oven to 400 degrees F and lightly grease a baking dish.
  2. In a small bowl combine spices cumin, garlic, chili, and salt. Rub both sides of chicken with spices.
  3. In a medium bowl combine peppers and onions, garlic powder, salt, oregano, and lime juice. Pour fajita mixture over chicken breast.
  4. Finish the casserole with shredded cheese.
  5. Bake the chicken fajita casserole for 25-30 minutes, time may vary depending on the size of the chicken . Chicken is done when it reaches an internal temperature of 165 degrees F.
  6. Broil the top for 1-2 minutes to crisp the cheese. Serve with avocado, rice or cauliflower rice, enjoy!

Summer Grilled Peach & Herbed Goat Cheese Salad

Summer Grilled Peach & Herbed Goat Cheese Salad is a delicious seasonal salad with simple hearty ingredients. This salad is made with peppery arugula, bright sweet grilled peaches, earthy herbed goat cheese, quinoa, and almonds for crunch.

The beauty of this salad is that you could throw in any seasonal produce and make it delicious! If you can’t find peaches you can use strawberries, cherries, blueberries, tomatoes, or raspberries in their place. But because it is summer around here peaches are so sweet and abundant and just bring so much sweet flavor to this salad so I highly recommend you use peaches if you can find them!

I am a huge fan of goat cheese, but I get it’s not for everyone. You can sub burrata, feta, or fresh mozzarella in this salad. There is nothing I love more than grilled onions, so just being extra I added some, not a fan keep them out. This healthy and fresh grilled peach salad is perfect for lunch or a side salad at dinner. Want to make it a complete meal, just add your favorite protein on top!

Ingredients

Honey Mustard Vinaigrette

  • 1 tbsp lemon juice
  • 1/4 cup olive oil
  • 1/2 tbsp yellow mustard
  • 1/2 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1 tbsp honey
  • salt to taste

For the Salad

  • 2 ripe but firm peaches 
  • 5 ounces arugula
  • 1/2 cup cooked quinoa
  • 2 oz herbed goat cheese, or more if desired
  • 1/4 cup slivered almonds
  • 1/4 white onion, cut in rings

Instructions

  1. Place all vinaigrette ingredients in a 1 cup mason jar with a lid and shake until mixed.
  2. Preheat your grill or grill pan to medium-high heat and brush with oil. Grill the peaches and onion rings for 3 minutes per side. Remove with a spatula.
  3. Place the arugula in a large salad bowl with quinoa, peaches, onion, goat cheese, and slivered almonds.
  4. Toss with vinaigrette, serve immediately, ENJOY!

Easy Italian Turkey Meatballs

Easy Italian Turkey Meatballs are an easy and delicious family meal. Serve it over your favorite pasta, spaghetti squash, or in your favorite sub rolls. 

So it looks like we are slowly crawling out of quarantine lifestyle. The kid’s activities are starting back up, which I am so happy for however that also means less time to get dinner out, and maybe chick-fil-a in a pinch! I love 30-minute meals that taste amazing and the kid’s love! These easy Italian turkey meatballs are the perfect easy dinner that pleases everyone!

If you are new around here I pretty much am a Trader Joes addict, my mom was when I was young and now I am, going on a 32 yr loyal customer, there should be a special discount for this haha! Should I be proud or embarrassed, haha! I made these Easy Italian Turkey Meatballs with all ingredients you can find at traders, but also all markets will carry the same ingredients. I love their sweet Italian chicken sausage in this recipe. 

This recipe can be made in the oven or the air fryer. 

How To Make Easy Italian Turkey Meatballs

  • Preheat the oven 350 degrees F and spray a baking sheet with nonstick spray. 
  • For the meatballs: In a large bowl combine the ground turkey, sausage meat, panko crumbs, eggs, parsley, garlic powder, and salt. Using your hands or spoon gently mix all the ingredients until well combined.
  •   Baked Meatballs: Using a small ice cream scoop or a cookie scoop, form meat mixture into 1 1/2 – 2-inch balls, makes about 23-26 meatballs. Place meatballs on your prepared baking sheet, spacing apart. Lightly drizzle with olive oil or avocado oil. Bake for 20-25 minutes or until cooked through. 
  • Air Fryer Meatballs: Spray the frying basket with nonstick spray. Depending on the size of your basket you may need to do this in batches. Place meatballs in the basket, be sure not to overcrowd the basket. Air fry at 390 degrees for 9 minutes, or until done (depending on the size of meatball).
  • In a large skillet with 2-inch sides add in marinara sauce and heat on medium-high heat.
  • Add the meatballs to the sauce and simmer for about 10 minutes. Add fresh basil, Mozerella, or parmesan if desired. I used 4 slices of fresh mozzarella and tore it into pieces and dropped it over the meatballs, you could also use shredded mozzarella.  

Serve these meatballs with spaghetti noodles or in a sub sandwich! They are also fantastic on there own! Enjoy!!

Asian Steak Bites & Coleslaw Bowl

Asian Steak Bites  & Coleslaw bowl is a delicious, light, and healthy meal that is packed with flavor! 

There is nothing I love more than my meals served in a bowl. A good bowl always comes with grains, veggies, proteins, fats, and a good sauce, that’s typically hot sauce for me. These Asain Steak bites go great in rice bowls, and also tacos. The coleslaw complements the steak so well! 

Serve them up with cauliflower rice for a low carb option or white rice is great too, and the kids prefer it. Sometimes I do half cauliflower rice and half white rice. Alternatively, you can serve these Asian Steak Bites as tacos, with the coleslaw on top, some avocado, and sriracha hot sauce, so delicious! Any way you serve them you are going love every bite.

How to make Asian Steak Bites & Coleslaw Bowl

  • Start by cutting the steak into small one inch cubes. Try to do this as even as possible so they cook evenly. Set steak bites in a glass bowl or a ziplock bag. 
  • In a bowl whisk together coconut aminos, minced garlic, minced ginger, chili garlic paste, and sesame oil. Pour over the steak and toss. Let marinate for 30 minutes – 4 hours. 
  • Heat a cast-iron skillet or nonstick pan, once the skillet is hot add in your steak in a single layer. Let cook for 2-3 minutes and flip steak, cook for another minute or so. If you like a medium-well steak cook a little longer till the desired doneness. 
  • Serve with cauliflower rice or white rice, coleslaw, avocado, cilantro, sesame seeds, and sriracha for some heat! Enjoy

Coleslaw

The coleslaw comes together easily, toss all ingredients together, whisk your dressing and Wah-lah!!

Asain Steak Bites

  • 1.5 pounds sirloin steak
  • 1/4 cup coconut aminos
  • 2 cloves minced garlic
  • 1 tsp minced ginger
  • 2 tsp chili garlic paste
  • 3 tsp toasted sesame oil

Coleslaw

  • 2 cups shredded green cabbage
  • 2 cups shredded purple cabbage
  • 2 carrots, grated
  • 1/2 cup cilantro leaves 
  • 2  tsp white vinegar
  • 2 tbsp mayo, paleo or regular 
  • 2 limes, juice of
  • 1 tsp garlic powder
  • salt & peper to taste

For Serving

  • rice or cauliflower rice
  • avocado
  • cilantro
  • sesame seeds
  • Sriracha

  1. Toss cabbage, carrots, and cilantro leaves in a mixing bowl.
  2. In a small bowl whisk together vinegar, mayo, lime juice, garlic powder, salt, and pepper. Pour over cabbage mixture and toss.

    You guys, this is so good! I think cauliflower is one of the most versatile vegetables around! I made this Cauliflower Pizza Crust thinking the kids would totally give me a ‘what the heck is this’ look, but they just kept eating!! Considering they would never go for cauliflower as their first vegetable of choice, I would call this recipe a complete winner! Cauliflower Pizza Crust is made with simple and wholesome ingredients. I used a small head of cauliflower, Eggland’s Best eggs, cheese, and spices. This low carb pizza crust is a blank canvas for you to top with whatever your heart desires!

    How to make Cauliflower Pizza Crust

    • Preheat oven to 450F. Line a baking sheet with parchment paper and set aside. 
    • Chop your cauliflower into florets, and place half in your food processor. Process till extra fine. Repeat for the other half. 

    • Place the cauliflower rice in a nonstick pan over medium-high heat. Cook stirring frequently for 8 minutes. Or place in a microwave-safe bowl and cook in the microwave for 4 minutes, let cool. 

    • Using a nut bag, cheesecloth, or clean dish towel drain water out of the cauliflower. Remove as much water as possible. 

    • Transfer cauliflower to a large bowl. Stir in Eggland’s Best eggs, seasonings, mozzarella, parmesan, salt, and pepper.

    • Transfer mixture onto your prepared baking sheet and spread out your crust, keep 1/4 – 1/2 inch thick for best results. Spray lightly with nonstick spray and bake for 15 minutes, and broil for 3. 

    • Top pizza crust with sauce, cheese, and your favorite toppings. Bake for 8 more minutes.
    • Serve immediately, enjoy!

    The ultimate Low Carb Comfort Food!! Cauliflower Mac and Cheese is so cheesy and is the most comforting perfect dish minus the pasta! It is low carb comfort food that is packed with vegetables and protein. 

    This is the perfect dish when you are craving mac and cheese. I was in my kitchen preparing my Perfect Mashed Potatoes to bring to my in-laws for Thanksgiving and I could not stop thinking about how much I wanted mac and cheese!  So while the potatoes were boiling I stared on the epic Cauliflower Mac and Cheese!

    I had an incredible spin class in the morning and could not hold off until our thanksgiving lunch at my in-laws. While I forged through the fridge I stumbled upon 3 heads of cauliflower. I guess I was feeling rather ambitious about cauliflower during my weekly grocery shop, ha! Sometimes I am guilty of being over-ambitious grocery produce shopper. 

    I would consider this cauliflower mac and cheese to be a thanksgiving gift I gave to myself! It was pouring outside and after my killer spin class, I needed some Comfort Food that wasn’t going to undo all the work I just had put in at spin, haha! It is not often that I crave comfort food but for some reason today was the day! You are going to LOVE this Cauliflower Mac and Cheese, oh and the added bits of bacon…OH MY YUM! I was in a blissful comfort food coma!

    Can I make this vegetarian?

    YES!! Get yourself some bacon bits, they are vegan-friendly and sprinkle in 1/4 of what the recipe calls for! Or you can completely omit it!

    Make the perfect Mac and Cheese Sauce 

    • Use real cheese: To make a sauce that isn’t grain or gritty you need to use real cheese. The kind you grate yourself! Pre shredded cheese contains chemicals that make the sauce grainy and gritty. You are not limited to cheddar, play around with your favorites, mild cheddar just happens to be my absolute favorite!  
    • Sauce first: combine all sauce ingredients but your cheese. Once it is combined turn off heat and stir in your cheese in small batches. 

    How to make Cauliflower Mac and Cheese 

    • Preheat your oven to 425 degrees F and prepare a baking sheet with parchment paper. 
    • Start by chopping your cauliflower into florets, then place them on your prepared baking sheet and drizzle lightly with olive oil. You want 1/2 inch pieces.
    • Bake your cauliflower for 15-20 minutes, fork-tender. 
    • Prepare the sauce while the cauliflower is baking. Start by heating the butter and oil over medium heat. Add in your shallot and sautè for 2 minutes.
    • Stir in flour. Cook on low for 2-3 minutes to cook out the flour.
    • Add in milk and bring the heat back to medium, whisk continuously for 2 minutes. Once milk begins to boil turn off heat and season with salt( I used a 1/2 tsp) and pepper. 
    • Add in 2 cups of cheese in slowly, mix well till cheese is melted and velvety.
    • Stir in your bacon pieces and cauliflower then transfer to a casserole dish and top with the rest of the cheese. 
    • Bake at 400 for 17-20 minutes, or till hot and bubbly. 
    • If you like a browed top broil for 2 minutes, watch closely so it does not burn!

    • 2 tbsp butter
    • 1 tbsp olive oil
    • 3 tbsp flour
    • 2 cups 2% milk
    • 2 1/2 cups mild cheddar cheese
    • 1/3 cup cooked bacon chopped in small pieces
    • salt and pepper

    Instructions

      Preheat your oven to 425 degrees F and prepare a baking sheet with parchment paper.
