One bowl, less than 10 ingredients, thats my kind of meal!
This is a family favorite and a total crowd pleaser. My dear sister Audrey is biggest fan of this chicken salad. I often get a call around 11:00am from her asking what I’m making for lunch… I know she is just hoping I say chicken salad!I have grown used to these calls and sometimes pretend I don’t hear my phone, haha! She is in looove with this stuff. It really is so delicious, and packed with so much flavor. I just finished up a batch of this salad for the week. This is a perfect salad topper for me, and sandwich filler for the fambam.
So I won’t sit here and claim this is the best chicken salad ever, because chicken salad is soooo subjective. Here is how I made it, feel free to add or subtract whatever you like! I personally don’t love real mayo, but I’m all about the vegan mayo spread from Trader Joe’s. Alright enough rambling, go get your chicken salad on baby!
- 3 cup chopped chicken breast
- 1/4 cup diced onion
- 1/3 cup grated apple
- 1/4 cup diced dill pickles
- 1/2 cup chopped walnuts
- 1/2 cup mayo
- 1 tbsp yellow mustard
- 2 tbsp diced fresh dill
In medium bowl, mix all ingredients.
Stop and taste, adjust taste according to your preference. I like to add a dash of pink salt and throw this on a bed of greens or on top of some toasted pumpernickel bread. Enjoy!
