Healthy Peanut Butter Cookies

Peanut butter cookies remind me of my childhood at Christmas time. Every year my 4 siblings and I would make Santa a nice batch of peanut butter cookies with M&M’s on top. I’m almost certain we gave Santa a sugar high. No shame in our game, we all need to treat ourselves every now and then.

These peanut buttaaaa cookies the perfect amount of sweet and chewy. Yes thats totally how I say it… Now lets say it together, is “peanut butaaaaa’ time! I love to crumble one of these cookies on my morning chia pudding or on top of a smoothie bowl, so good!! They are the perfect grab and go cookie.

Healthy Peanut Butter Cookies

Ingredients

  • 1/2 cup peanut butter
  • 3/4 cup almond meal
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1 egg or flax egg
  • 1/4 cup coconut nectar
  • dash pink salt

Instructions

  • Preheat oven to 350. Place all ingredients in your food processor and process a few minutes till texture is smooth. You could also use a hand mixer. Roll into one inch balls place on your non stick baking tray. Using a fork press down in and make a criss cross pattern. 
  • Bake for 7-8 minutes. Let cool down for 5-7 minutes. Enjoy.
