Today was a great day in the kitchen!! I was able to meal prep for the week, and clean out the entire fridge, hallelujah! Seriously the fridge was looking like a bomb went off. During the week I am busy with work and kids so having food already made is ideal so I don’t snack all day. I do not meal prep much other then some roasted veggies and meats. I like to have chicken breast of burger patties around to throw on a salad, in a wrap, or in a quick Buddha bowl. The weeks I’m not so organized I’ll usually pick up a rotisserie chicken. For dinner I always like it made fresh so other than chopping veggies and marinading I don’t really make dinner until the day of.
While I was doing my fridge clean out I found ground chicken that needed to be used today, so I set it aside to make sure I don’t waste it. I mixed the ground chicken with zucchini (MY FAVORITE), yellow onion, feta and spices. It is low carb, easy to make, juicy and extremely flavorful! You can keep them in the fridge all week to add to your meal, or even eat as a chicken burger. Its a great way to sneak some veggies in the little ones too, my kids love these chicken burgers.

Everyday simple and delicious chicken burger!
- 16 oz (1lb) ground chicken
- 2 large garlic cloves, minced
- 1/2 cup yellow onion, diced
- 1 1/2 cup zucchini, shredded
- 1 tbsp herbs de Provence
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 cup feta crumbles
Preheat oven to 400. In a mixing bowl combine all ingredients, except feta and mix. Make sure everything is well combined.
Add feta, and fold in.
Grease a baking pan. With a ice scream scoop or a spoon scoop out 6-7 equal parts. I find it sorta icky forming patties so I use food gloves. Form a patty with each scoop and place on your baking pan.
Bake for 25 minutes, or till center is firm.
Turn on broiler. Put burgers back in for 2-5 minutes. Watch closely so they don't burn!!
