ALOHA! It may technically be Fall, however the weather is saying summer. Barbecuing on warm summer night is my favorite!! Not to mention it keeps the stove clean..less to clean up afterward #winning.
My day started off as pumpkin baking extravaganza with my two toddlers.. it looked like a bomb went off in the kitchen. Once we got everything cleaned up it was practically time to start dinner.
These skewers were a hit, got a thumbs up from everyone. The marinade is so simple and so damn good!! I would of added pineapple to the skewers, but hubs isn’t a pineapple fan! The marinade is sweet with no added sugars or oil, and only 5 ingredients. I let the chicken sit in the marinade for 1 hour and it was so flavorful and juicy.

Makes 9-10 skewers
- 3/4 cup coconut aminos
- 1 tsp salt
- 3 tbsp coconut sugar
- 2 tsp freshly grated ginger
- 2 tbsp granulated garlic powder
- 4 chicken breast, cubed (7-8 cups)
- 2 bell peppers, cut into 1 inch cubes
- 1 red onion, cut into 1 cubes
Whisk together marinade.
Marinate chicken in fridge for a minimum of 30 minuets. Thread the chicken on skewers along with the peppers and red onion.
Grill for 12-15 minutes until the meat is done or to your desired liking. Remove from the grill and garish with green onion.
I like to splash on about 2 more tablespoons of coconut aminos right before serving. Enjoy!
