Easy Italian Turkey Meatballs

Easy Italian Turkey Meatballs are an easy and delicious family meal. Serve it over your favorite pasta, spaghetti squash, or in your favorite sub rolls. 

So it looks like we are slowly crawling out of quarantine lifestyle. The kid’s activities are starting back up, which I am so happy for however that also means less time to get dinner out, and maybe chick-fil-a in a pinch! I love 30-minute meals that taste amazing and the kid’s love! These easy Italian turkey meatballs are the perfect easy dinner that pleases everyone!

If you are new around here I pretty much am a Trader Joes addict, my mom was when I was young and now I am, going on a 32 yr loyal customer, there should be a special discount for this haha! Should I be proud or embarrassed, haha! I made these Easy Italian Turkey Meatballs with all ingredients you can find at traders, but also all markets will carry the same ingredients. I love their sweet Italian chicken sausage in this recipe. 

This recipe can be made in the oven or the air fryer. 

How To Make Easy Italian Turkey Meatballs

  • Preheat the oven 350 degrees F and spray a baking sheet with nonstick spray. 
  • For the meatballs: In a large bowl combine the ground turkey, sausage meat, panko crumbs, eggs, parsley, garlic powder, and salt. Using your hands or spoon gently mix all the ingredients until well combined.
  •   Baked Meatballs: Using a small ice cream scoop or a cookie scoop, form meat mixture into 1 1/2 – 2-inch balls, makes about 23-26 meatballs. Place meatballs on your prepared baking sheet, spacing apart. Lightly drizzle with olive oil or avocado oil. Bake for 20-25 minutes or until cooked through. 
  • Air Fryer Meatballs: Spray the frying basket with nonstick spray. Depending on the size of your basket you may need to do this in batches. Place meatballs in the basket, be sure not to overcrowd the basket. Air fry at 390 degrees for 9 minutes, or until done (depending on the size of meatball).
  • In a large skillet with 2-inch sides add in marinara sauce and heat on medium-high heat.
  • Add the meatballs to the sauce and simmer for about 10 minutes. Add fresh basil, Mozerella, or parmesan if desired. I used 4 slices of fresh mozzarella and tore it into pieces and dropped it over the meatballs, you could also use shredded mozzarella.  

Serve these meatballs with spaghetti noodles or in a sub sandwich! They are also fantastic on there own! Enjoy!!

Ingredients

  • 1 lb ground turkey
  • 1 lb sweet Italian chicken sausage, casings removed, I used Trader Joes brand
  • 1/2 cup panko crumbs
  • 2 eggs
  • 1/2 cup parsley
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • Mozzarella for serving
  • basil leaves for serving
  • 32 ounces marinara sauce

 During the middle of the COVID grocery shop craze, I could only find chicken drumsticks at one point. We pretty much had meatless dinners more than usual, but I was able to get a Costco pack of drumsticks. Luckily they put limits on everything so inventory went back to semi-normal as time has gone on.  So what’s a girl to do with all these drumsticks, feed her family of course! In my herb garden, I still have thanksgiving herbs growing strong, so I went with fresh rosemary for this recipe, so delicious. If you have trouble finding fresh rosemary springs you can use dried rosemary however fresh is always best. Also if you have chicken thighs on hand you can use those in place of chicken drumsticks, you may need to adjust cooking time depending on the size of meat. So needless to say Garlic Herb Sheet Pan Chicken Drumsticks is the perfect easy a delicious meal for any night of the week!

My favorite part of sheet pan meals is the easy cleanup afterward. The cook time is mindless set your timer and go about doing other things around the house, in my case, it was the never-ending laundry, haha! We like to serve ours with a side salad and rice, but any side could work into this meal.

Ingredients

  • 4 cups diced potatoes, cut in even pieces
  • 16 ounce bag roasting carrots
  • 8 ounces of green beans, trimmed and washed
  • 1/2 white onion, sliced
  • 2 tbsp butter, melted
  • 4 garlic cloves, minced
  • 1/2 tsp oregano
  • 1/2 tsp onion powder
  • 1/2 tsp salt

Chicken Drumsticks

  • 2 lemons, juice of
  • 4 garlic cloves, minced
  • 1 tbsp, fresh rosemary leaves, chopped
  • 3 tbsp, olive oil
  • 2 tbsp stone ground mustard
  • 3 tbsp honey
  • 1/2 tsp salt
  • cracked pepper to taste
  • 8-10 chicken drumsticks

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Chop potatoes in even pieces and prepare veggies. Place veggies on your sheet pan.
  3. In a small bowl combine and stir together the melted butter, minced garlic, oregano, onion powder, and salt.
  4. Pour butter mixture over veggies and toss well, set aside.
  5. In a small bowl make the chicken marinade by combing olive oil, stone ground mustard, minced garlic, honey, lemon juice, fresh rosemary, salt, and pepper. Stir till ingredients are well combined.
  6. In a ziplock bag or separate bowl pour marinade over drumsticks, toss, and coat well. Place drumsticks over veggies on your sheet pan. Then pour remaining marinade over chicken.
  7. Bake chicken for 50 -55 minutes. If the skin is not crispy on brown broil for 5 minutes. Time may vary depending on the size and thickness of chicken.
  8. Coat chicken and veggies in juices at bottom of the pan, serve immediately, enjoy!

Sheet pan dinners, I love them and mainly because of the minimal amount of dishes I have to do! Sheet Pan Roasted Sausage, Peppers & Potatoes is a fuss-free dinner perfect for any weeknight. I love Italian chicken sausage, I get the pre-cooked one from trader joes, it’s just where I do the majority of my grocery shopping these days. The precooked sausage is easiest to work with and taste great in Roasted Sausage, Peppers & Potatoes.

Veggies Variations for Roasted Sausage, Peppers & Potatoes

The most important thing here is to cut the veggies into even shapes and sizes so it cooks evenly. The potatoes always take the longest to cook so my advice is to dice them in smaller pieces. I used some sweet potato in this dish, however, if you do not like sweet potato feel free to use just russet. Veggies can be swapped out in almost all dishes I highly recommend you use what you love, broccoli, zucchini, and mushrooms are great additions.

Ingredients

  • 12 oz Sweet Italian Chicken Sausage 
  • 2 medium bell peppers, seeded and diced
  • 1/2 cup red onion, diced
  • 2 russet potatoes, cubed
  • 1 sweet potato, cubed
  • 2 tbsp avocado oil
  • 1 tsp garlic powder
  • 1 tsp oregano
  • salt & pepper to taste

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Cut the potatoes into small even-sized cubes. Dice the bell peppers and onions, and slice the sausage.
  3. Spray a large baking sheet with cooking spray.
  4. Pour the potatoes, bell peppers, onion, and sausage over your prepared baking sheet.
  5. Sprinkle with avocado oil, seasonings, and toss to evenly coat everything in oil and seasonings.
  6. Bake for 15 minutes and then turn veggies with a spoon and bake another 15 minutes.
  7. Cooking time may vary depending on the size of potatoes.

Notes

If your not a sweet potato fan you can sub it for a russet potato.

These Teriyaki Chicken Skewers come together quickly and are perfect for a weeknight dinner or entertaining. Serve them over a bed of rice with a side of green veggies for a complete meal.

One of our favorite chicken recipes is these Teriyaki Chicken Skewers, they are a big hit with the kids! There is something about chicken served on a stick that they love! These skewers are great for entertaining too, fun and delicious finger food for everyone to enjoy! 

So now that the cat is out of the bag if you missed my Instagram post… I’m Pregnant!!! That’s right baby number 3 will be here in the Fall. Lately, I’ve been craving Asian flavors, so these Teriyaki Chicken Skewers hit the spot!! I made on the cast iron cause I love a good char and well it was too cold to fire up the grill. 

The marinade is simple, make it the night before and you will have dinner out in 20 minutes! I choose to use chicken thighs for these Teriyaki Chicken Skewers because I find them to be more flavorful and juicy than chicken breasts, and they tend to not dry out as fast!

Teriyaki Chicken Skewers

Teriyaki Chicken Skewers

These Teriyaki Chicken Skewers come together quickly and are perfect for a weeknight dinner or entertaining. Serve them over a bed of rice with a side of green veggies for a complete meal.

Prep Time 1 hour
Cook Time 12 minutes
Total Time 1 hour 12 minutes

Ingredients

  • 1 tablespoon corn starch
  • 3/4 cup coconut aminos
  • 4 tbsp agave (can sub brown or coconut sugar)
  • 3 tbsp rice vinegar
  • 3 cloves minced garlic
  • 1 tsp ground ginger
  • 2 lbs chicken thighs, cut into strips

Instructions

    Whisk together corn starch with 1/4 cup of water and set aside.

    In a small saucepan over medium heat whisk together the coconut aminos, agave, rice vinegar, garlic, and ginger, bring to a simmer. Turn off heat.
    Pour in your cornstarch mixture and whisk till sauce thickens about 2 minutes. Let cool to room temperature.

    In a large bowl or a zip lock bag, combine your teriyaki sauce and chicken thigh strips. Let marinate for 1 hour to overnight.

    Heat your grill or cast iron to medium-high heat.

    Thread your chicken onto the skewers. Place skewers on your grill and cook till chicken is cooked through, about 4 minutes each side.
