This Chicken Stir Fry with Rice Noodles is a Fabulous meal that can easily be foraged from your fridge, you can literally add in whatever veggies you have. I love meals like this, and I love when it comes out effortlessly delicious!
Can we talk Trader Joe’s Thai Lime & Chili Cashews for a minute…OMG! These pretty much tied all the flavors together and gave it killer crunch. Go get these, they are insanely delicious, and make this stir fry out of this world good!!
Trying to keep it healthy and fresh isn’t always easy, especially because places like Trader Joe’s freezer aisle making life so easy sometimes. However, I try my very best to make 90% of the food we consume and always use real organic ingredients whenever possible. Feel free to add a scrambled egg to this recipe, I did not cause my 4yr old does not like eggs.

Delicious, fast and easy meal!!
- 1 8oz package, flat rice noodles
- 1 cup chicken breast, thinly sliced (1 breast fillet)
- 1 tbsp garlic, finely sliced
- 1 large carrot, ribboned
- 1 small head baby broccoli, cut in thirds
- 1 tbsp toasted sesame oil
- 2 tbsp garlic oil
- 3 tbsp coconut aminos
- 1 tbsp tamari
- 2 tbsp basil, finely diced
- 1/3 cup Thai Lime & Chili Cashews (Trader Joe's brand)
- 1 egg beaten (optional)
- Sea salt and pepper
Cook rice noodles according to package.
Buttlerfly chicken breast and slice into thin strips.
Heat a skillet or wok on high heat and add in toasted sesame oil and garlic oil. Season chicken with salt a pepper then stir fry for 2-3 mins.
Add in garlic, broccoli and carrot ribbons, stir fry for a few minuets and add in coconut aminos and tamari.
Optional egg step: If your going to add in egg, empty your skillet into a dish, add more oil and add in egg. Allow egg to cook then add in noodles and toss well to break up the egg. Return the rest of the chicken stir fry mixture, stir fry for about 2 more minutes on high heat.
If you choose to not add an egg, simply add noodles into the stir fry. Toss everything together and stir fry on high heat.
Serve the noodles with crushed Thai Lime & Chili cashews on top.
I also like to add more fresh basil, lime wedges and green onion. Enjoy!
