I LOVE pesto!! I love its versatility, and its ability to amp up a dish! Its a great dip, spread or sauce. I have a big beautiful herb garden my yard, and lets just say I keep the basil on tap! Herbs are the best way to add flavor to any dish!
This pesto is fast and fresh, it will fill you up and make you feel good. It can be used as a dip, spread or sauce. This recipe is packed with hearty nutrients. I used nutritional yeast to give this pesto a nice cheesy flavor and keep it dairy free, its also great source of B12. If you don’t have nutritional yeast on hand sub with some fresh parmesan. This recipe yields about 1 cup and goes quick! If you are trying to avoid oil, you can use water or broth. This pesto is light but ohh sooooo decadent!

Creamy, light and delectable!
- 2 cups basil leaves
- 1 cup spinach
- 2 tbsp evoo
- 2 tbsp lemon juice 1 lemon
- 1 medium avocado
- 2 garlic cloves
- 2 tbsp pinenuts
- 2 tbsp nutritional yeast
- 1/2 tsp salt
In a food processor place all ingredients except evoo. Process till you get a smooth texture, about 1 minute.
Slowly pour in your evoo. Stop and taste, adjust as needed by adding more garlic, lemon, salt, ect.. I like a zing to my pesto so I usually add more garlic. Keeps the vampires away!
I like to eat it on top of zoodles, with so grilled chicken, like I have pictured.
Will store in a air tight container in the refrigerator for 3 days.
