Another day, another treat! I’ll be honest, I need a little sweet treat everyday. When I say sweet treat, I am talking about chocolate. Where are all my chocolate lovers at?! Rich chocolate, the kind of treat you need a glass of milk to wash it down with, thats the good stuff.
For 6 yrs now, I have been a die hard for raw vegan desserts. I can not believe its been 6 years.. and now I’m just starting a blog.. the idea of a blog has been rather intimidating for me. Now lets get down to business. These no bake chewy caramel brownies are so rich and decadent. My hubby and kids devoured these in less then 24 hrs.
They are refined sugar free, vegan, raw, really friggen good, and highly addictive!! So what are you waiting for, go make yourself some! Trust me when I say refined sugar is so not in!
- 3/4 cup raw almonds
- 3/4 cup raw hazelnuts
- 10 pitted medjool dates
- 4 tbsp cacao powder
- 1 tbsp water
- 1/3 cup coconut cream
- 6 pitted dates
- 2 tbsp cashew butter
- 1 tsp vanilla extract
- dash of pink salt
- 2 oz melted dark chocolate
Rub coconut oil in a square brownie pan or glass container, the set aside. Place all brownie ingredients, except water in a food processor and process till mixture becomes like dough, about 3-4 minuets. While processing add in water at the end and dough ball should form. Take the brownie mix and press it in your pan evenly. Place in freezer.
No need to rinse out your food processor for Caramel layer. Place in all ingredients and process for about 3 minuets, you want a smooth creamy consistency. Pour over brownie layer, place in freezer for 2hrs
Lastly remove your brownies from your dish and place on parchment paper. Pour your melted chocolate over the top. It should instantly harden. Cut in squares and Enjoy!!!
They store best in the freezer.
