Here is one way to make salad not so basic. I remember growing up there was a ‘CPK’ restaurant in the Tustin Market Place, and they only item I would order was the bbq chicken salad. I remember it being so good, and despite it being covered in ranch a bbq sauce, there was still some salad in there!! I don’t remember the official name on the menu, but it had bbq and salad in the title! I drove past the old restaurant location earlier this morning, and I totally got a bbq & ranch salad craving!!! So when lunch time came around I made my own version of a bbq & ranch salad! It did not disappoint!
I whipped this salad up for the 4 of us, everyone ate it! Sometimes my toddlers can be picky about salad, I have to go into their plates and chop everything up into micro bite size pieces. Luckily I had no complaints on this salad. I mean who doesn’t love a Ranch and BBQ sauce combo, its creamy, bold, smoky and delicious! This salad takes all but 10 minuets to prepare, and I was able to use up my left over chicken breast. I am the worst with leftovers…getting better though! I added toppings that make it more of a Southwest style salad, you’re going to love it!

Fresh healthy salad combo!
- 1 large romaine heart
- 1 cup leafy greens, I used kale
- 1/3 cup corn kernels
- 1/2 cup diced cherry tomatoes
- 1 small avocado, cubed
- 3 tbsp shredded Mexican cheese blend
- 1/2 cup black beans, drained and rinsed
- 1/2 cup chicken breast, diced or shredded
- 1/3 cup Ranch I used primal kitchen ranch its df,gf,rsf
- 1/3 cup Bbq sauce
Assemble salad in bowl. Start by putting your greens in, the add toppings.
In a bowl whisk ranch and bbq sauce together. You don't need to use all the dressing at once, I saved a little in the fridge for future use.
Pour desired amount of dressing over salad and toss.
