I wish I could tell you I learned all my baking skills from my mom or grandma, but this girl has taught herself! My mom was the best cook, her mexican food is unreal!! She was never much of a baker, there was 2 things she would bake spice cake & raspberry squares, both amazing. However nothing trumped her ability to cook meals, I’m actually planning a weekend for her to teach me a few dishes! I’ve learned most of my baking skills thru trial and error with a little YouTube too! What excites me about baking is the idea of it being something new, I’ve always slayed raw vegan desserts, so its been fun to switch things up!! Most of all I’m absolutely loving blogging about it. I started my foodies passion on Instgram, and I so wish I would have started my blog sooner.
Now I’m trying to transition back to these cookies.. and tie this is in.. but it’s just not going to happen, so lets talk about these amazing cookies!!
The Best EVER!! I mean it! This cookie takes the fall cookie crown, and there is no refined sugars! I’ve been having a lot of fun in the kitchen lately, playing with new recipes and experimenting with pumpkin. My kids have been a huge help in the taste testing department. These cookies are thick soft and chewy!

Thick, Soft and Chewy!!
- 1 cup al purpose flour
- 1/2 tsp baking soda
- 1/2 cup coconut sugar
- 1 tsp pumpkin spice
- 1 tbsp vanilla extract
- 3 tbsp pumpkin puree (not pie filling)
- 2 tbsp maple syrup
- 1 egg or flax egg room temp
- 2 tbsp refined coconut oil use refined for no coconut flavor
- 1/3 cup mini chocolate chips
- sea salt
In a mixing bow combine egg, vanilla extract, pumpkin puree, maple syrup and coconut oil. Whisk ingredients together then add in coconut sugar and whisk again till all ingredients are well mixed.
In a mixing bowl combine flour, baking soda, pumpkin spice and whisk.
Pour wet ingredients into dry ingredients and stir.
Fold in chocolate chips.
Preheat oven to 350, and allow batter to sit 7-10 minuets.
Using a cookie scoop, place batter on greased a cookie sheet.
Bake for 10 minutes, sprinkle with sea salt. Let cool and ENJOY FRIENDS!
To make these cookies vegan use a flax or chia egg!
