This is the original recipe I came up with for the birth of the fruit pizza. It was just and idea in a swimming pool of food thoughts I had. From there I have played with the flavors, and mixed up the toppings. The best way to eat this is with seasonal fruit toppings or chocolate. All the sweetness from this pizza comes from natural fruit sugars and a touch of honey. This is without a doubt one of my Instagram fan favorites. Feel free to play with different fruits, or banana whip flavors.
- 2 cup crisp rice cereal
- 2 tbsp sticky sweetener (i.e honey, Agave, brown rice syrup) I used 1tbsp honey 1tbsp Agave
- 1 tsp chia seeds
- 3 tbsp melted coconut oil
- 1 tbsp cacao powder
- 3 frozen sliced bananas
- 1/3 cup toasted coconut
Place all ingredients in a bowl and mix. Line a pizza/pie pan with parchment paper and pour mixture. Evenly spread it out.
Stick in the freezer (10mins or more) while you make the banana whip and toppings.
Place in your food processor and process for 2-5 mins till smooth. You might need to stop half way and scrape sides.
Pull the crust out of your freezer and spread your banana whip on pizza! Top with fruit, nuts, chocolate! Whatever your heart desires! Store in freezer till your ready to eat. Enjoy.
