PREHEAT THE OVEN

1. Preheat oven to 425 degrees F. Line a baking sheet with parchment paper.

PREP THE CRUST

2. Roll pie crust out to a 14- inch circle. Using a knife, cup, or round cookie cutter cut into small circles, rerolling dough as necessary. Place circles on the prepared baking sheet. Brush each disk with egg white and sprinkle evenly with 1 tbsp turbinado sugar.
