Ingredients

sweet potato
peeled and cut into 1/2-inch dice
1 medium sweet potato
1/2
onion
diced
1/2 cup
1/2
cup
mushrooms diced
1
tomatillo
diced
1/3
cup
cilantro leaves diced

garlic cloves
minced
1/3
cup
black beans (cooked)
salt and pepper to taste
1-2
tbsp
oil
I used avocado oil
chili flakes
(optional)
Instructions
Heat olive oil in a large skillet, set over medium - high heat.
Place sweet potato, onion, mushrooms, minced garlic & tomatillo, cook for 15-20 minutes stirring often till potatoes start to brown.
Stir in beans and cilantro.
Dived between 2-3 plates.
Top with a fried egg & avocado!! Or whatever makes your taste buds sing!
