Boneless Skinless Chicken Thighs

Key Ingredient

Chicken – boneless/skinless chicken thighs – harissa paste (I used Trader Joe’s) – avocado oil – cumin – onion powder – garlic cloves, minced – Salt & pepper to taste –  For burgers – brioche buns –  slices of white cheddar – Lettuce – 1 sliced tomato – Mayo

COMBINE

1. In a medium-size bowl mix avocado oil, harissa paste, cumin, onion, salt, and pepper. Add in chicken thighs and toss till thill each piece is coated. Let sit for 10 minutes to as long as overnight.

FOR GRILLING

2. To grill: Preheat grill to 400 degrees F, cook chicken thighs 3-4 minutes per side, or until done. Time may vary depending on the size of the chicken.

FOR BAKING

3. To bake: Preheat the oven to 435 degrees F. On a rimmed baking sheet arrange chicken in a single layer.

TOAST

4. Toast buns, melt cheese on top of the chicken, assemble burgers!
