It’s grilling season, my absolute adroit season. Reasons being not as many dishes to do when you grill, haha! But in all seriousness these chicken thighs are delicious! My family loves them sandwiched between a brioche bun to make the best-tasting chicken sandwich ever! If my kids are eating it I would not consider this to be a spicy chicken but it does have a kick to it.

What is Harissa

If you haven’t heard of Harissa don’t worry I only heard of it a few years ago! It’s basically a blend of warming spices, hot Chile peppers, and olive oil. Its a popular flavor in the North African region, and now extremely easy to find at almost all grocery stores. Its so perfect for the harissa chicken thighs. I get my harissa paste from Trader Joes, and I absolutely love it! In other grocery stores its usually found in the international isle.

How to make Harissa Chicken Thighs

Lucky for us both this is a super simple recipe. If you been here a while you know easy family recipes are my jam! The mix of a few marinade ingredients plus 10 minuets of marinating, either grilling or baking and you will have yourself the most juicy and flavorful chicken thighs around! If you are making chicken burgers out of them I highly recommend you use brioche buns, a little mayo, and your favorite burger addd ins.

Ingredients

Chicken

  • 2 lbs boneless/skinless chicken thighs
  • 1/3 cup harissa paste (I used Trader Joe’s)
  • 2 tbsp avocado oil
  • 1 & 1/2 tsp cumin
  • 1/2 tsp onion powder
  • 2 garlic cloves, minced
  • Salt & pepper to taste

For burgers

  • 5-6 brioche buns
  • 5-6 slices of white cheddar
  • Lettuce
  • 1 sliced tomato
  • Mayo

Instructions

    1. In a medium-size bowl mix avocado oil, harissa paste, cumin, onion, salt, and pepper. Add in chicken thighs and toss till thill each piece is coated. Let sit for 10 minutes to as long as overnight.
    2. To grill: Preheat grill to 400 degrees F, cook chicken thighs 3-4 minutes per side, or until done. Time may vary depending on the size of the chicken.
    3. To bake: Preheat the oven to 435 degrees F. On a rimmed baking sheet arrange chicken in a single layer.
    4. Toast buns, melt cheese on top of the chicken, assemble burgers!

    I’m confused – in the prep it states this – “Let sit for 10 minutes overnight.”

    Uhm, so is it at least 10 min. – or can/should marinate as long as possible up to overnight? We really like your recipes, I do most of the cooking and my wife is my sous chef, we make a good team. One website I have a ton of recipes from is called classycooking.com. and we’re now using your site too – keep up the great work !

    • Hey Ernie, apologies for the late reply been home with sick kiddos this week!! I would bake at 400 degrees for 35-40 mins. Just make sure internal temp reaches 165F!
