Garlic Steak Tortilla Wraps with Creamy Roasted Garlic Sauce

I am not being dramatic. This roasted garlic sauce; six cloves of garlic cooked low and slow in olive oil until they are golden and sweet, then blended with mayo, Greek yogurt, lemon, and smoked paprika — is the kind of sauce that makes you rethink everything you have ever put on a wrap.
I made these garlic steak tortilla wraps on a Tuesday, and by Thursday my family was already asking when we were having them again. My husband. My kids. Everyone was on board immediately. These are officially in our weekly rotation, and I do not see that changing anytime soon.
Here is what I love about this recipe: it is so easy, and it looks and tastes like you did something really impressive. You cook the skirt steak whole — not in strips, not in pieces — just one beautiful piece of meat in a hot pan. You let it rest for 8 to 10 minutes. Then you slice it against the grain, and the whole thing just falls into these perfect, tender, juicy pieces that make everyone at the table go quiet for a second.

INGREDIENTS
For the steak:
- 1.5 to 2 lbs skirt steak
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp onion powder
- 1 tsp cumin
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp red pepper flakes (optional)

For the creamy roasted garlic sauce:
- 6 cloves garlic
- 2 tbsp olive oil
- 1/2 cup mayonnaise
- 1/4 cup plain Greek yogurt
- 1 tbsp fresh lemon juice
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper

For the wraps:
- Large flour tortillas (burrito size)
- 1/2 red onion, finely diced
- 2 Roma tomatoes, diced
- 1/4 cup fresh flat-leaf parsley, chopped
- Extra roasted garlic sauce for drizzling

A note on the skirt steak: Cook it whole, not in strips. This is the move. A whole piece of skirt steak in a hot pan develops a better crust, stays juicier, and gives you that gorgeous money shot when you slice it against the grain. Rest it 8 to 10 minutes before slicing — non-negotiable.
A note on the roasted garlic sauce: This sauce is the reason this recipe is going into your weekly rotation. Make a double batch. It keeps in the fridge for a week and goes on absolutely everything — grilled chicken, shrimp, fries, roasted vegetables, sandwiches. Everything.
A note on the toppings: No cheese in this recipe. The sauce is rich enough, and the steak is flavorful enough that cheese would just get in the way. Trust the process.
HOW TO MAKE GARLIC STEAK TORTILLA WRAPS
Step 1 — Make the roasted garlic sauce first. Add olive oil and garlic cloves to a small saucepan over low heat. Cook 8 to 10 minutes, stirring occasionally, until garlic is golden, soft, and fragrant. Do not rush this step. Low and slow is what turns the garlic sweet and mellow. Let it cool for 5 minutes, then transfer to a blender or small food processor. Add mayonnaise, Greek yogurt, lemon juice, smoked paprika, salt, and pepper. Blend until completely smooth. Taste and adjust salt. Set aside.



Step 2 — Season the steak. Pat skirt steak dry with paper towels. Rub all over with olive oil then season generously on both sides with garlic powder, smoked paprika, onion powder, cumin, salt, pepper, and red pepper flakes if using.

Step 3 — Cook the steak whole. Heat a large cast iron skillet or heavy pan over high heat until very hot. Add the steak and cook 3 to 4 minutes per side for medium-rare, or 4 to 5 minutes per side for medium. You want a deep golden crust on both sides. Do not move it around. Let it sear.
Step 4 — Rest the steak — do not skip this. Transfer the steak to a cutting board and rest 8 to 10 minutes. This is not optional. Resting lets the juices redistribute and is the difference between a juicy steak and a dry one. Cover loosely with foil while it rests.
Step 5 — Slice against the grain. Identify the direction of the muscle fibers in the steak. Slice perpendicular to those fibers into thin strips. This is what makes skirt steak tender instead of chewy. If you are not sure, look at the lines running through the meat and cut across them.


Step 6 — Build the wraps. Warm tortillas in a dry pan or directly over a gas flame for 30 seconds per side. Spread a generous layer of roasted garlic sauce down the center. Add steak slices, diced red onion, diced tomatoes, and fresh parsley. Drizzle with more roasted garlic sauce. Wrap tightly and serve immediately. Extra sauce on the side for dipping.

- Cook the steak WHOLE. Not in strips. Whole. You get a better crust, juicier meat, and a beautiful slice.
- Rest the steak 8 to 10 minutes before slicing. Every time. No exceptions.
- Always slice skirt steak against the grain or it will be chewy.
- Get your pan truly hot before adding the steak. Hot pan equals good crust.
- The roasted garlic sauce is the star. Make a double batch. It keeps for a week and goes on everything.
