Hello, warm weather! Bring on all the fresh salads! Spring and summer happen to be my favorite seasons to cook in! As much as I love soup, nothing quite looks like summertime grilling. I swear everything tastes better off the grill.
Every time I make it, at least two siblings arrive at my door! The reality of food blogging is we can’t always eat everything we make. However, it never goes to waste! This salad is perfect for making and eating lunch a few days after it stores great in the fridge!

BUT when you make it yourself, it’s much cheaper and tastes better!! This is a copycat recipe of the Whole Foods Broccoli Crunch Salad. However, this one is better cause it’s a fraction of the price, and you have leftovers!

Did I mention it’s a BUDGET FRIENDLY RECIPE!! everything is crazy high due to inflation, and some weeks I find myself putting things back we don’t need.

Can I use frozen Broccoli?

Ingredients
- 8 cups broccoli florets
- 1/2 red onion, diced finely
- 1/3 cup dried cranberries
- 6 slices of center-cut bacon
- 1/4 cup salted cashews, coarsely chopped
- 1 cup mayo
- 2 tbsp lemon juice
- 1 & 1/2 tsp apple cider vinegar
- 2 tbsp agave
- salt & pepper to taste

Instructions
- Arrange bacon in a single layer in a large skillet over medium-high heat. Cook turning once. Bacon would be browned and crispy.
- Combine broccoli, red onion, cranberries, crumbled bacon, cashews, and pumpkin seeds in a large serving bowl.
- Mix mayo, lemon juice, apple cider vinegar, agave, salt, and pepper in a smaller bowl. Pour dressing over a large serving bowl of broccoli salad. Toss until everything is evenly coated. Serve and enjoy.
- OR cover the bowl and let it chill in the fridge. Toss again before serving. Enjoy!

i use roasted and lightly salted cashews. However raw would work well.
