A rich garlic butter apple cider glaze with just the tiniest pinch of cinnamon that caramelizes beautifully over the chicken as it roasts. Golden crispy potatoes that soak up every drop of that glaze in the pan. And a smell that makes your whole family show up at the dinner table on time.

I made one very important adjustment to this recipe. More butter and more garlic in the glaze. Because there is literally never enough butter and garlic in any recipe I have ever made. The extra butter makes the glaze incredibly rich and glossy. The extra garlic adds a savory depth that balances the sweetness of the apple cider perfectly.

My husband had his with white rice because he puts white rice next to literally every dinner regardless of what I make. 😂 My kids had the gold potatoes. I had the sweet potatoes all to myself because I am the only one who loves them in this house and I was not sharing.

For the chicken: 6 to 8 bone-in skin-on chicken thighs 2 tsp salt 2 tsp black pepper 2 tsp garlic powder 1 tsp smoked paprika 1 tsp onion powder 2 tbsp olive oil

For the apple cider garlic butter glaze: 1 cup fresh apple cider 5 tbsp butter (I use more than most recipes — trust me) 5 to 6 cloves garlic, minced (again more is always better) 3 tbsp honey 2 tbsp Dijon mustard 1 tbsp fresh thyme leaves 1 tbsp apple cider vinegar Tiniest pinch of cinnamon — and I mean the smallest pinch Salt and pepper to taste

For the roasted gold potatoes: 2 lbs small gold potatoes, halved 3 tbsp olive oil 2 tsp salt 1 tsp garlic powder 1 tsp smoked paprika 1 tsp black pepper

For the sweet potatoes (optional — I had mine all to myself 😂): 2 large sweet potatoes, cubed 2 tbsp olive oil 1 tsp salt 1 tsp garlic powder 1 tsp smoked paprika Pinch of cinnamon

To finish: Fresh thyme for garnish Flaky sea salt Fresh apple slices for serving optional

A note on the apple cider: Use fresh apple cider not apple juice. The flavor difference is significant. Fresh apple cider has a depth and complexity that apple juice cannot replicate. Find it in the produce section of most grocery stores especially in fall.

A note on the butter and garlic: I added extra butter and extra garlic to the glaze because there is literally never enough of either. The extra butter makes the glaze incredibly rich and glossy. The extra garlic adds savory depth that balances the sweetness of the apple cider. Do not be shy with either.

A note on the cinnamon: Just the tiniest pinch. You want a background warmth not a cinnamon forward flavor. If you can smell the cinnamon strongly you have added too much. Less is more here.

A note on the potatoes: I cooked the gold potatoes layered under the chicken on one sheet pan and the sweet potatoes on a completely separate pan. This way the gold potatoes soak up all the chicken drippings and the sweet potato people in your house (just me apparently) get their own pan without complaints from the kids.

HOW TO MAKE APPLE CIDER GLAZED CHICKEN THIGHS

Step 1 — Preheat oven to 425 degrees F High heat is what gives you that deeply golden crispy chicken skin and caramelized glaze. Do not go lower.

Step 2 — Season and sear the chicken Pat chicken thighs completely dry with paper towels. Season generously on both sides with salt, pepper, garlic powder, smoked paprika, and onion powder. Heat olive oil in a large oven-safe skillet over medium-high heat. Place chicken skin side down and do not touch it for 6 to 8 minutes until the skin is deeply golden and crispy. Flip and sear 3 more minutes. Remove and set aside.

Step 3 — Make the apple cider garlic butter glaze In the same skillet add butter and let it melt over medium heat. Add minced garlic and cook 90 seconds stirring constantly until golden and fragrant. Add fresh apple cider, honey, Dijon mustard, fresh thyme, apple cider vinegar, and that tiniest pinch of cinnamon. Bring to a boil then reduce heat and simmer 5 to 7 minutes stirring occasionally until the glaze has reduced by half and coats the back of a spoon. Taste and adjust seasoning. This glaze smells absolutely incredible.

Step 4 — Prep the gold potatoes Toss halved gold potatoes with olive oil, salt, garlic powder, smoked paprika, and pepper. Spread on a large sheet pan in a single layer cut side down.

Step 5 — Layer chicken over potatoes Place the seared chicken thighs skin side up directly on top of the potatoes on the sheet pan. The chicken drippings will fall down into the potatoes as everything roasts together. This is how you get the most incredible roasted potatoes you have ever tasted.

Step 6 — Glaze the chicken Spoon the apple cider garlic butter glaze generously over each chicken thigh. Reserve some glaze for basting halfway through roasting.

Step 7 — Roast the sweet potatoes separately If making sweet potatoes toss cubed sweet potatoes with olive oil, salt, garlic powder, smoked paprika, and a tiny pinch of cinnamon on a separate sheet pan. Roast alongside the chicken.

Step 8 — Roast everything Place both sheet pans in the oven. Roast for 35 to 40 minutes until chicken reaches 165 degrees F and the skin is deeply golden and the glaze has caramelized beautifully. Spoon extra glaze over the chicken halfway through roasting.

Step 9 — Finish and serve Remove from oven. Spoon any pan drippings over the chicken one more time. Garnish with fresh thyme. Finish with flaky sea salt. Serve immediately with the roasted potatoes and sweet potatoes on the side.

TIPS FOR THE BEST APPLE CIDER GLAZED CHICKEN THIGHS

Use fresh apple cider not apple juice. The flavor difference is immediately apparent in the glaze.

More butter and more garlic than you think you need. The extra butter makes the glaze rich and glossy. The extra garlic adds savory depth that balances the sweetness perfectly.

Do not skip the sear. That golden skin from the sear is what makes this recipe. 6 to 8 minutes skin side down without touching it.

Reduce the glaze until it coats the back of a spoon before adding the chicken. A properly reduced glaze caramelizes beautifully in the oven. A thin glaze just runs off.

Layer the chicken over the potatoes on the same sheet pan. The chicken drippings falling into the potatoes as they roast creates the most incredible roasted potatoes you have ever tasted.

Baste the chicken with extra glaze halfway through roasting. This builds up layers of caramelized flavor on the skin.

The smallest pinch of cinnamon. Seriously. You want warmth not a spiced chicken situation.

Cook sweet potatoes on a separate pan. Different cooking times and different flavor profiles work better separately. Plus this way the sweet potato people and the regular potato people in your house are both happy.

VARIATIONS

Add sliced apples to the sheet pan. Tuck thin apple slices around the potatoes in the last 15 minutes of roasting. They caramelize and become something magical alongside the chicken.

Use bone-in chicken breasts instead of thighs. Increase roasting time to 45 to 50 minutes and check internal temperature at 45 minutes.

Add Brussels sprouts. Toss with olive oil and salt and add to the sheet pan with the potatoes. They roast beautifully alongside the chicken and soak up all those pan drippings.

Make it with pork chops. Bone-in pork chops work beautifully with this exact same apple cider glaze. Reduce oven time to 20 to 25 minutes.

Add a splash of bourbon to the glaze. One tablespoon of good bourbon adds an incredible depth to the apple cider glaze. Very fall. Very delicious.

HOW TO STORE

Refrigerator: Store chicken and potatoes separately in airtight containers for up to 4 days.

Reheat chicken: In a 375 degree F oven for 10 to 12 minutes to re-crisp the skin. The microwave works but you lose the crispy skin.

Reheat potatoes: In a hot skillet with a drizzle of olive oil for 3 to 4 minutes until edges crisp back up.

The glaze: Make extra and store in an airtight container in the fridge for up to 1 week. It is incredible drizzled over pork chops, salmon, or roasted vegetables.

FAQ

Can I use boneless skinless chicken thighs?

Yes. Reduce roasting time to 20 to 25 minutes and check internal temperature at 20 minutes. You will not get the same crispy skin result but the flavor from the glaze will still be incredible.

Can I use apple juice instead of apple cider?

I strongly recommend against it. Fresh apple cider has a depth and complexity that apple juice cannot replicate. The glaze will taste flatter and sweeter with apple juice. Fresh cider is worth finding.

Why do my potatoes not crisp up?

Make sure they are in a single layer with cut side down and not overcrowded. Overcrowding creates steam which prevents crisping. Use two sheet pans if needed.

How do I know when the chicken is done?

Use a meat thermometer. 165 degrees F at the thickest part near the bone. The skin should be deeply golden and the glaze should look caramelized and sticky not wet and shiny.

Can I make the glaze ahead of time?

Yes. Make the glaze up to 3 days ahead and store in the fridge. Reheat gently before using. This is a great time saving tip for busy weeknights.

Why bone-in skin-on chicken thighs?

The bone keeps the meat incredibly juicy during the long roast time. The skin gets deeply golden and crispy and holds all that glaze on the surface. Boneless skinless thighs are a shortcut but they do not give you the same result.
