Greek Sheet Pan Chicken (One Pan, 45 Minutes, Zero Complaints)

Greek sheet pan chicken is all three.

Juicy chicken thighs marinated in lemon, garlic, and oregano. Crispy roasted potatoes. Zucchini and cherry tomatoes that get a little caramelized in the oven. Everything on one pan, in one oven, at the same time. I am not standing at the stove. I am not babysitting three different burners. I put the pan in, I set the timer, and I go help someone with homework.

This is the dinner I make on practice nights when we get home at 6:30 and everyone is starving and I need something on the table by 7. It takes about ten minutes of actual work and then the oven handles everything else.

High protein, real food, one pan. My four athletes eat it. That is the only review that matters.

  • 6–8 bone-in, skin-on chicken thighs
  • 1.5 lbs baby potatoes, halved
  • 4 tbsp olive oil, divided
  • 6 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 2 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup pitted Kalamata olives
  • 1/2 cup crumbled feta (add AFTER roasting — not before)
  • Fresh parsley for finishing

  • 1 cup full-fat Greek yogurt
  • 1 English cucumber — grated, ALL moisture squeezed out (this is critical)
  • 3 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tbsp fresh dill or mint
  • 1/2 tsp salt
  • 1 tbsp olive oil

VARIATIONS

  • Chicken breasts: Swap thighs for boneless, skinless breasts. Reduce total cook time to 25–28 minutes. Pull at exactly 165°F.
  • Add chickpeas: Drain and rinse a can of chickpeas and toss them in with the potatoes. Extra protein and they get crispy in the oven.
  • Swap the veggies: Bell peppers, artichoke hearts, asparagus, or broccoli all work. Just add anything that cooks fast (asparagus, broccoli) in the last 15 minutes with the zucchini.
  • Greek bowls: Slice the leftover chicken off the bone and serve over rice or quinoa with the roasted veggies and a dollop of tzatziki. Best lunch of the week.

HOW TO MAKE GREEK SHEET PAN CHICKEN

Step 1 — Preheat and prep the potatoes. Preheat oven to 425°F. Toss halved baby potatoes with 2 tbsp olive oil, salt, pepper, and garlic powder. Spread on a large sheet pan in a single layer.

Step 2 — Coat the chicken. Mix remaining 2 tbsp olive oil, minced garlic, lemon zest, lemon juice, oregano, smoked paprika, salt, and pepper. Coat chicken thighs all over — get under the skin if you can.

Step 3 — Build the pan. Nestle chicken thighs skin-side up on top of the potatoes. Pour any remaining marinade over everything.

Step 4 — Roast. Roast at 425°F for 40–45 minutes until the chicken skin is deeply golden and crispy and the potatoes are tender. The internal temperature should read 165°F at the thickest part of the thigh.

Step 5 — Make the tzatziki while the chicken roasts. Grate the cucumber, wrap it in a clean towel, and squeeze hard until all the moisture is out — this is the most important step; watery tzatziki is no good. Mix with Greek yogurt, garlic, lemon juice, dill, salt, and olive oil. Refrigerate until ready to serve.

Step 6 — Finish and serve: Pull the pan from the oven. Add feta and Kalamata olives now — not before roasting, or the feta burns. Finish with fresh parsley. Serve straight from the pan with tzatziki on the side.

TIPS FOR THE BEST GREEK SHEET PAN CHICKEN

  • Don’t skip the marinade time. 30 minutes minimum. Overnight is better. The lemon and garlic need time to get into the chicken.
  • Use bone-in, skin-on thighs. The skin gets crispy at 425°F, and the bone keeps the meat juicy. Boneless breasts work but dry out faster — pull them at exactly 165°F.
  • A single layer is non-negotiable. Crowded vegetables steam instead of roast. Use a large half sheet pan (18×13 inches) or two pans.
  • Add the zucchini and tomatoes at the halfway mark — not from the start. They need 15 minutes, not 45. They will be mushy if they go in with the potatoes.
  • Let it rest 5 minutes before serving. The juices redistribute and the chicken is better for it.
  • Feta goes on after the oven. It will turn rubbery if you roast it. Add it at the end.

Refrigerator: Store leftovers in an airtight container for up to 4 days. Reheat in a 375°F oven for 10 minutes to re-crisp the skin, or microwave if you’re not worried about the skin.

Freezer: The chicken freezes well. Pull the meat off the bone and store in a freezer bag for up to 3 months. The potatoes and zucchini do not freeze well — they get watery. Make a fresh batch of vegetables when you reheat.

Meal prep: Make the marinade and marinate the chicken the night before. Pull it out of the fridge in the morning. Dinner is 10 minutes of hands-on work when you get home from practice.

FAQ

Can I use boneless skinless chicken thighs?

Yes. Reduce the cook time to 20–22 minutes total. They won’t have the crispy skin, but they stay juicy and take on the marinade really well.

Can I make this ahead?

Marinate the chicken up to 24 hours ahead. The vegetables can be prepped and stored in the fridge. Don’t assemble on the pan until you’re ready to roast.

What size sheet pan do I need?

A half sheet pan — 18×13 inches. If you don’t have one that big, use two pans and divide the ingredients between them. Do not crowd one small pan.

How do I know when the chicken is done?

Internal temperature of 165°F at the thickest part of the thigh, not touching bone. A meat thermometer is the only reliable answer here.

Can I use chicken breasts?

Yes — boneless skinless breasts work well. Pull them at exactly 165°F, around 22–25 minutes. Don’t overcook them, or they will be dry.
