I make these for myself.

Not because my kids request them. Not because they are the flashiest thing I cook. But because after years of feeding everyone else first, these spinach feta egg bites are the breakfast I actually look forward to.

Spinach Feta Egg Bites (High Protein, Creamy, Easy Meal Prep)

There is something about spinach and feta together that just works. The saltiness of the feta, the earthy spinach, all wrapped up in that creamy blended egg base. It tastes like way more effort than it actually is. Thirty minutes, one blender, done.

My kids grab them too, even though they claim they do not like spinach. They have never once left one behind. That tells me everything.

One thing I will tell you upfront before you start because it will save your entire batch. You have to squeeze the spinach completely dry before it goes anywhere near the muffin pan. Spinach holds a shocking amount of water, and if you skip that step, you will end up with soggy egg bites that fall apart. Squeeze it with both hands through a paper towel like you mean it. Thirty seconds of effort that makes all the difference.

Everything else is simple. Let me walk you through it.

WHY YOU WILL LOVE THESE

Ready in 30 minutes, start to finish. High protein and perfect for athletes, active kids, and busy adults. Creamy custardy texture with no water bath required. Meal-prep friendly and stays good in the fridge for 5 days. Freezer-friendly for up to 3 months. Naturally gluten-free and low carb. Kid-approved, even for kids who claim they hate spinach

INGREDIENTS

For the egg base: 8 large eggs, 1/2 cup full-fat cottage cheese (4%), salt and black pepper to taste, pinch of dill (optional but highly recommended)

For the filling: 1/2 cup baby spinach, Small handful of fresh dill, finely chopped (mixed in with the spinach) about 1 tbsp; 1/3 cup crumbled feta cheese

For the pan: Nonstick spray

A note on the cottage cheese: Full-fat 4% only. It blends into the base and creates that silky custardy texture. Good Culture is my go-to brand.

A note on the feta: Buy it in a block and crumble it yourself if you can. Block feta is creamier and less dry than pre-crumbled. Either works, but block feta is better.

A note on the dill: I list it as optional, but please just try it. Even a tiny pinch pairs with the feta in a way that makes people ask what your secret ingredient is. It is the thing people always ask about when they taste these for the first time.

EQUIPMENT

Full-size blender — essential for a smooth, creamy base. The blender fully breaks down the cottage cheese curds and creates a texture you cannot achieve with a whisk.

Silicone muffin pan — my first choice every time for egg bites. Perfect release, no sticking, easy cleanup.

Standard nonstick muffin tin — also works. Grease it very generously.

Rimmed baking sheet — place your silicone pan on this before putting it in the oven.

Airtight meal prep containers — for storing all week.

HOW TO MAKE SPINACH FETA EGG BITES

Step 1 — Prep your spinach and dill

Take your fresh baby spinach and chop it up finely. Then take your fresh dill and chop it up the same way. Combine the chopped spinach and dill together.

Step 2 — Preheat your oven to 325 degrees F

Step 3 — Blend the egg base

Add your 8 eggs and half cup cottage cheese to your blender with salt and pepper. Blend on high for a full 30 to 45 seconds until completely smooth with zero visible cottage cheese curds. Silky and slightly frothy is what you are looking for.

Step 4 — Prep your pan

Place your silicone muffin pan on a rimmed baking sheet. Spray each cavity generously with nonstick spray.

Step 5 — Add your fillings first

Divide the chopped spinach and dill mixture evenly between the 12 muffin cups. Add the crumbled feta on top. Fillings always go in first, so you get filling in every single bite.

Step 6 — Pour the egg base

Pour the blended egg mixture over the fillings in each cup, filling to about three-quarters full. Use a toothpick to gently swirl everything together if you like.

Step 7 — Bake

Bake at 325 degrees F for 18 to 22 minutes. Start checking at 18 minutes. Tops should look matte and centers just barely set. They will look almost underdone when you pull them. That is exactly right. They firm up as they cool.

Step 8 — Cool before removing

Cool in the pan for 8 full minutes before removing. They are fragile when hot and will firm up and release cleanly as they cool. Run a small spatula around the edges if needed, then pop them out.

Step 9 — Serve or store

Eat warm immediately or let cool fully before transferring to containers.

TIPS

Squeeze the spinach like your breakfast depends on it. Because it does. Spinach holds a surprising amount of water, and if any of it gets into your muffin cups, it will create soggy, loose egg bites that fall apart. Take the extra 30 seconds. Squeeze it dry.

Blend for the full 30 to 45 seconds. The cottage cheese needs that time to fully break down. You should see zero curds in your blended mixture before it goes into the pan.

Full fat cottage cheese only. The fat is what creates the creamy texture. Low fat will give you a looser, less satisfying egg bite.

Do not overbake. Matte tops, slight jiggle in the center. That is your pull point. They firm up as they cool.

Add the dill. I know it is listed as optional, but please just try it. Even the tiniest pinch changes the whole flavor profile and makes these taste like something you would order at a nice brunch spot.

Cool completely before storing. Warm egg bites create condensation in a sealed container and get soggy. Let them cool fully before they go in the fridge or freezer.

VARIATIONS

Add sun-dried tomatoes. Chop them finely and add a tablespoon per cup along with the spinach and feta. The flavor combination is outstanding.

Add fresh garlic. Saute one minced garlic clove with the spinach as it wilts. Adds a savory depth that works really well with the feta.

Use kale instead of spinach. Baby kale works great here. Chop it finely and wilt and squeeze the same way. Slightly more texture than spinach but just as good.

HOW TO STORE AND MEAL PREP

Refrigerator: Store in an airtight container for up to 5 days. Parchment paper between layers prevents sticking.

Freezer: Cool completely first. Freeze flat on a baking sheet until solid (1 to 2 hours), then transfer to a freezer bag or airtight container. Up to 3 months.

Reheat from fridge: Microwave 20 to 30 seconds.

Reheat from freezer: Microwave 60 to 90 seconds, flipping halfway through. Or 300-degree oven for 8 to 10 minutes.

Meal prep strategy: Make a double batch on Sunday. One pan for the fridge this week. One pan for the freezer for next week. Done once, breakfast handled for two weeks.

FAQ

Do I have to cook the spinach first or can I use it raw?

You need to cook it first. Raw spinach has too much moisture and will make your egg bites watery and loose. Wilting it first removes most of that moisture, and squeezing it dry removes the rest. Both steps are necessary.

Can I use frozen spinach?

Yes. Thaw completely and squeeze out every drop of moisture before using. Frozen spinach holds even more water than fresh, so squeeze it really well.

Can I use a different cheese instead of feta?

Yes. Goat cheese is a great substitute and gives a similar tangy, creamy flavor. Cream cheese works too and makes them even richer. Sharp cheddar gives a completely different but equally good flavor profile.

Do I need a water bath?

No. The cottage cheese base and the 325-degree temperature handle the creaminess without it.

Can I use Greek yogurt instead of cottage cheese?

Yes. Greek yogurt is what I use in my original egg bites recipe, and it also works beautifully here. Cottage cheese gives a slightly richer result. Greek yogurt gives a lighter, tangier one. Both are great.

Why are my egg bites soggy?

Almost always the spinach. Go back and make sure you are squeezing every drop of moisture out before adding it to the muffin cups.

Why are my egg bites rubbery?

Overbaking. Pull them when the tops look matte, and the centers still have a very slight jiggle. They firm up as they cool.

Can I make these in a mini muffin tin?

Yes. Reduce baking time to 12 to 15 minutes and check at 12 minutes.

How many calories per egg bite?

Approximately 75 to 80 calories per egg bite with this recipe. Full nutrition information in the recipe card below.

How much protein per egg bite?

Approximately 6 to 7 grams of protein per bite.

Are these gluten-free?

Yes. The base recipe is completely gluten-free. Check your feta label to confirm.

Are these keto or low carb?

Yes. Approximately 1 gram of carbs per egg bite.

Can I add meat to these?

Absolutely. Diced turkey, crumbled turkey sausage, or prosciutto work beautifully with the spinach and feta combination.
