Garlic Butter Steak Bites with Parmesan Roasted Potatoes
There are nights when I carefully plan dinner, style the plates, and take my time photographing everything. And then there are nights like this one.

I barely got the camera out before my kids were standing in the kitchen asking if it was ready yet. Someone grabbed a fork. Someone else grabbed a potato straight off the pan. And suddenly, the steak bites were gone.
That’s how I knew this one was special.
These garlic butter steak bites with Parmesan roasted potatoes are everything I need dinner to be right now. Simple. Filling. Packed with flavor. And good enough that my kids don’t even wait for photos. When you’re raising athletes and feeding a lot of hungry people, that’s the ultimate sign a recipe is a win.
This is the kind of meal I make when I want something that feels indulgent but doesn’t require hours in the kitchen. One pan of crispy potatoes. One skillet of juicy steak bites. Garlic butter tying it all together. It’s comfort food that still feels doable on a busy weeknight.
Why This Steak and Potatoes Recipe Works So Well
This recipe is built for real life.
Steak bites cook quickly and stay tender. Roasted potatoes get crispy in the oven without much effort. Garlic butter adds richness without being heavy. And the entire meal comes together in under an hour.

It’s hearty enough for growing kids with big appetites, but still simple enough that I don’t feel overwhelmed making it at the end of a long day. These are the meals that keep me consistent in the kitchen and keep my family coming back for more.
Ingredients You’ll Need
Steak Bites
- 2½ pounds sirloin steak, cut into bite size pieces
- 2 tablespoons olive oil
- 4 tablespoons butter
- 4 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- Salt and black pepper, to taste
- Fresh parsley, chopped, for garnish

Parmesan Roasted Potatoes
- 2½ pounds baby potatoes, halved
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ½ cup freshly grated Parmesan cheese
How to Make Garlic Butter Steak Bites with Parmesan Potatoes
Roast the Potatoes
Preheat your oven to 425 degrees Fahrenheit. Line a large baking sheet with parchment paper.
Add the halved potatoes to the baking sheet. Drizzle with olive oil and toss with garlic powder, Italian seasoning, and salt. Spread them out in an even layer, cut side down.
Roast for 20 minutes, then flip the potatoes. Sprinkle Parmesan cheese evenly over the top and return to the oven for another 5 to 7 minutes, until golden and crispy.

Cook the Steak Bites
While the potatoes finish roasting, heat a large skillet over medium high heat. Add olive oil.
Add the steak bites in a single layer. Season with salt and black pepper. Cook for 2 to 3 minutes per side until browned. Work in batches if needed so the steak sears properly.
Reduce the heat to medium. Add butter and minced garlic to the skillet. Sprinkle in smoked paprika, garlic powder, and onion powder. Toss the steak bites in the garlic butter for 1 to 2 minutes until fragrant and coated.
Remove from heat and garnish with fresh parsley.
Feeding Athletes and Hungry Kids
This meal disappears in my house. Between practices, games, and nonstop movement, my kids need dinners that actually satisfy them. Steak and potatoes never disappoint.
If I’m serving younger kids, I’ll cut the steak bites a little smaller. For older kids, I pile everything onto their plates and let them go to town. It’s filling, protein packed, and comforting without being complicated.

Leftovers, if you have any, reheat beautifully and make a great next day lunch.
Tips for the Best Steak Bites and Potatoes
Use sirloin, ribeye, or New York strip for the most tender steak bites.
Do not overcrowd the pan when cooking the steak. This helps it brown instead of steam.

Notes
- Don’t overcrowd the skillet or the steak will steam instead of sear.
- Sirloin works great, but ribeye or NY strip are also excellent options.
- This recipe reheats well for lunches the next day.
Sirloin is my go-to for this recipe because it’s tender, flavorful, and cooks quickly. Ribeye or New York strip also work great if you want something a little richer. I don’t recommend stew meat since it won’t get that juicy, seared texture.
How do I keep steak bites from getting tough?
The key is high heat and not overcrowding the pan. Cook the steak in batches so it sears instead of steaming, and don’t overcook it. Steak bites only need a few minutes per side to stay tender.
This meal is best fresh, but leftovers do reheat well. Store steak and potatoes separately in airtight containers and reheat gently in a skillet or the oven so the steak doesn’t dry out.
Baby potatoes or Yukon gold potatoes are ideal. They roast evenly, get crispy on the outside, and stay fluffy inside. Russet potatoes can work, but they won’t be quite as creamy.
Very much so. Steak and potatoes are always a hit in my house. You can cut the steak into smaller pieces for younger kids, and the flavors are simple and comforting without being spicy.
Yes. Roasted broccoli, green beans, or carrots pair perfectly with this dish. You can roast them on a second pan or toss them in during the last part of the potato cook time.
