This is not sweet. This is not dessert. This is not pumpkin spice anything. The pumpkin disappears completely into the broth, and what it leaves behind is a thick, rich, deeply flavored chili that tastes as if it simmered on the stove all day. My kids had no idea. My athletes demolished it. I made a full pot, and it was gone by dinner…

Three pounds of ground turkey, white beans, a full can of pumpkin puree, bone broth for extra protein, green bell pepper, and a spice blend that does all the work. One pot. Under 45 minutes. Toppings that make the whole thing look like a restaurant bowl.

I was skeptical too. Then I tasted it. The pumpkin is not the star 🌟; it is the secret. It thickens the broth, adds a subtle earthiness, and makes everything taste richer without you being able to put your finger on why.

For the chili:

  • 3 lbs ground turkey
  • 1 can (15 oz) pumpkin puree (NOT pumpkin pie filling)
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 can (14 oz) diced tomatoes
  • 1 can (4 oz) diced green chiles
  • 16.9 oz chicken bone broth
  • 3 cups chicken broth
  • 1 green bell pepper, diced
  • 1 small white onion, diced
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp garlic powder (plus more to taste)
  • 1 tsp onion powder
  • 1/4 tsp cinnamon (trust the process — see notes)
  • 1/2 tsp cayenne (optional — add if your family likes heat; personally, I have to omit it for my 4-year-old 😆)
  • 1 tsp salt + more to taste
  • 1/2 tsp black pepper
  • 1 tsp chicken bouillon powder
  • 1 tsp sugar

Pumpkin Turkey Chili

A note on the pumpkin: Use plain canned pumpkin puree — not pumpkin pie filling. The pie filling has sugar and spices added. You want the plain stuff.

A note on the bone broth: I used chicken broth and chicken bone broth for the extra protein hit — 19g protein per container. Regular chicken broth works fine, but bone broth makes this next level. Look for it near the regular broth at any grocery store.

A note on the cinnamon: I know. I almost skipped it too. At 1/4 tsp in a full pot of chili, you cannot taste cinnamon. You just taste depth. It is the move that makes people ask what your secret is. Do not skip it. This is the recipe I would bring to a fall gathering!

HOW TO MAKE PUMPKIN TURKEY CHILI

Step 1 — Sauté the vegetables. Heat olive oil in a large pot over medium-high heat. Add diced onion and green bell pepper. Cook 3–4 minutes until softened and fragrant.

Step 2 — Brown the turkey Add ground turkey and cook, breaking it up, until deeply browned. Do not rush this step — the color is flavor. Drain any excess liquid from the pot.

Step 3 — Add the spices Add the fresh garlic, chili powder, cumin, smoked paprika, garlic powder, onion powder, cinnamon, cayenne, bouillon powder, salt, and pepper. Stir into the turkey and cook for 1 minute, until fragrant. Your kitchen will smell incredible.

Step 4 — Build the chili. Add pumpkin puree, diced tomatoes, green chiles, white beans, bone broth, chicken broth, and sugar. Stir everything together. Bring to a boil, then reduce to a simmer.

Step 5 — Simmer: Simmer uncovered 20–25 minutes, stirring occasionally, until thickened. Taste and adjust salt. The chili should be thick, rich, and deeply flavored. If it is too thick, add a splash more broth.

Step 6 — Build the bowl: Ladle into bowls. Top with roasted pumpkin seeds, shredded cheddar, fresh cilantro, sliced jalapeño, and diced tomato. Serve with tortilla chips on the side. Do not skip the toppings — they make the bowl.

TIPS FOR THE BEST PUMPKIN TURKEY CHILI

  • Brown the turkey deeply. Light pink is not enough. You want real color on the meat before anything else goes in. That is where the flavor comes from. I have made this for many fall seasons, and it’s always best with browned meat!
  • Do not skip the cinnamon. 1/4 tsp in a full pot is nothing. It just adds warmth and depth. Nobody will taste cinnamon — they will just taste the best chili they have ever had.
  • Use bone broth if you can find it. The extra protein and collagen make this a genuinely elite recovery meal for athletes.
  • Taste at the end and add salt generously. Chili needs salt to come alive. Taste it before you serve it.
  • The toppings are not optional. Pumpkin seeds + cheddar + jalapeño + cilantro + diced tomato is the combination that makes this look and taste as it came from a restaurant.
  • Make a double batch and freeze half. This chili freezes perfectly. Pull it out on a weeknight when you have nothing and dinner is done.

VARIATIONS

  • Make it spicier: Double the cayenne or add a diced chipotle pepper in adobo sauce. Adds heat and a smoky depth.
  • Make it creamier: Stir in 2 oz of cream cheese at the end until melted. Adds richness without changing the flavor profile.
  • Slow cooker version: Brown the turkey first, then add everything to the slow cooker. Cook on LOW 6–8 hours or HIGH 3–4 hours.
  • Swap the beans: Black beans or kidney beans work instead of white beans if that’s what you have.
  • Add more vegetables: Zucchini, corn, or diced butternut squash all work well. Add with the broth.

HOW TO STORE

Refrigerator: Store in an airtight container for up to 5 days. This chili gets better on day 2 and 3 as the flavors continue to develop.

Freezer: Cool completely and freeze in portions for up to 3 months. Thaw overnight in the fridge and reheat on the stove or microwave. This is one of the best freezer meals you will have on rotation.

Meal prep: Make a full pot on Sunday. Portion into containers for the week. Your athletes have a high-protein lunch or dinner ready to go all week with zero extra effort.

FAQ

Can I taste the pumpkin?

No. The pumpkin disappears into the broth completely. It adds thickness and a subtle earthiness but you cannot pick it out as pumpkin flavor. I promise.

Can I use ground beef instead of turkey?

Yes. Ground beef works well — use 90/10 lean ground beef. The protein per serving will be similar and the flavor will be slightly richer.

Can I make this in the slow cooker?

Yes. Brown the turkey on the stove first for best flavor, then add everything to the slow cooker and cook on LOW 6–8 hours or HIGH 3–4 hours.

Is this spicy?

As written with 1/2 tsp cayenne, it has a mild heat. Leave out the cayenne for no heat at all, or double it plus add sliced jalapeño on top if your family likes it hot.

Why bone broth?

Extra protein (19g per container) and collagen for joint recovery. It also makes the base taste richer and deeper than regular broth. Highly recommend it for an athlete household.

Can I freeze this?

Yes — one of the best freezer meals you can make. Freeze in portions for up to 3 months.

CLOSING

I almost did not add the pumpkin.
