Mini Peach Galettes

These mini peach galettes are peach perfection. Made with flaky pie crust, sweet ripe peaches, and a touch of mango preserves. These little galettes are small pieces of paradise in each bite, add a small scoop of ice cream and you got the perfect dessert.

Summertime peaches are one of the juiciest seasonal fruits. My kids and I love peach season, but hate how fast it passes by! This year we decided got add a peach tree to our fruit tree collection, hopefully, it gets fruit next year. All the endless recipe possibilities are already stirring around in my brain.

I don’t do sweets often, so enjoy this one, haha! What can I say I’m a savory girl.

Galettes are free-form pies, there is no complicated shaping involved, they are easy and can be made any size. You can stick to a large one but personally, I love the minis, I mean they’re just so cute! You can dress these mini tarts in shaved coconut or whipped cream. However, if your up for a scoop of vanilla ice cream on top of a warm mini peach galette is just to die for!

How to Make Mini Peach Galettes

Preheat oven to 425 degrees F. Line a baking sheet with parchment paper. Roll pie crust out to a 14- inch circle. Using a knife, cup, or round cookie cutter cut into small circles, rerolling dough as necessary. Place circles on the prepared baking sheet. Brush each disk with egg white and sprinkle evenly with 1 tbsp turbinado sugar. Arrange thinly sliced peaches evenly in the center of each disk, leaving room on edges to roll up. (the pie crust will only partially cover the fruit. Brush the remaining egg whites over the edges and sprinkle the remaining turbinado sugar over the edges. Bake for 20-25 minutes or until the crust starts to brown. Place jelly in the microwave for 30 seconds, and brush jelly evenly over the fruit. Let galettes sit for 10 minutes.

These galettes will work with any fruit, I always suggest picking fresh seasonal as it tastes best! Like I said earlier, any jam or preserve will work on these, feel free to customize as your tastebuds desire! My little ones just love mini peach galettes with some whipped cream or a little scoop of ice cream.
