Taco seasoned cauliflower, warm corn tortillas, and tangy crema is a match made in heaven. 

How to make Roasted Cauliflower Tacos

This one speaks for itself guys, roast your cauliflower coated in taco seasoning. While that is happing get your topping ready here are a few of our favorites.

  • avocado slices

Tangy Cilantro Lime Crema

Are you ready to take these tacos to the next level, great, then make this! Blend together, greek yogurt, sour cream, cilantro leaves, lime juice, garlic, avocado, and water for the smoothest most delicious sauce. It completes the tacos so well, you might even want to dunk your tacos in it!

Roasted Cauliflower Tacos

These Roasted Cauliflower Tacos with a tangy cream make for a perfect vegetarian meal. 

Prep Time 10 minutes
Cook Time 25 minutes
Total Time 35 minutes

Ingredients

  • 1 large head of cauliflower, cut into small florets 
  • 2 tbsp taco seasoning
  • 4 tbsp olive oil
  • tortillas
  • cilantro and onion, finely diced
  • shredded cabbage
  • avocado slices

Tangy Cilantro Lime Crema

  • 1/4 cup greek yogurt
  • 1/4 cup sour cream
  • 1 lime, juice of
  • 1/4 cup cilantro leaves
  • 1/2 small avocado
  • 1 garlic cloves
  • 2 tbsp water
  • salt to taste

Instructions

  1. Preheat oven to 425°F.
  2. In a large bowl toss the cauliflower florets, taco seasoning, and olive oil. Spread cauliflower out on a large baking sheet.
  3. Bake cauliflower on center rack for 25 minutes, or until cauliflower is tender with crisp edges.
  4. Prepare tangy cilantro-lime crema by placing all ingredients into a small blender or food processor. Blend till smooth and creamy.
  5. Warm tortillas and prepare toppings
  6. Add the roasted cauliflower to the tortillas and top with your favorite toppings. Drizzle with the crema, serve immediately. Enjoy!
