This marinated green bean salad is fresh, vibrant, and delicious! The green bean salad is a perfect side dish for any meal. Made with the freshest and minimal ingredients, you will surely get a wow after the first bite.

Green beans, oh green beans… you either love them or hate them. I LOVE them in a salad, never had them in a casserole, and hate them from a can. I’ve wanted to make a green bean casserole for the longest time, but if I am being honest, I am not big on casseroles, but one day ill give it a try.

This marinated green bean salad is so dang delicious. I have been eating it with protein like a regular salad, and I seriously can’t get enough! We have an early thanksgiving celebration here because part of the family is headed to Europe, and this salad got all the best compliments from them! Thanksgiving has so many heavy side dishes, so this was a bright, fresh side to lighten things up.

Ingredients In Marinated Green Bean Salad:

  • fresh green beans
  • cherry tomatoes
  • parmesan
  • pinenuts
  • lemon
  • avocado oil
  • shallot
  • garlic
  • dijon
  • white balsamic
  • salt & pepper

How To Make Marinated Green Bean Salad

  • blanch green beans: Bring salted water to a boil in a large stalk pot. Add in green beans and boil for 3-4 minutes. Strain and rinse with cold water to stop the cooking.
  • make the dressing: In a large bowl, add in lemon juice, avocado oil, garlic, dijon, white balsamic, salt and pepper. Wisk this together till combined.
  • toss: to the bowl with the dressing, add the thinly sliced shallots and the green beans, toss, and coat. If you plan on marinating longer than 2 hours, don’t add the tomatoes. If you plan on only marinating 2hr or fewer, add the tomatoes.
  • marinate: cover the bowl with plastic wrap or transfer it to a large Tupperware dish with a lid. Let marinate for a minimum of 2 hours.
  • serve: transfer green bean salad to a serving dish and toss in pine nuts and parmesan. Serve chilled, enjoy.

Do I Have To Use Fresh Green Beans?

Yes! this recipe will not be good with canned green beans, and frozen green beans will add too much water to the dish. Fresh green beans will have the bright color and crunchy texture you need for this marinated green bean salad.

How Do I Store Leftovers?

Store this salad in an air-tight container in the refrigerator for up to 4 days. Do not freeze.

Ingredients

  • 2 pounds trimmed fresh green beans
  • 1-pint cherry tomatoes halved
  • 1/2 cup parmesan
  • 1 shallot, thinly sliced
  • 2 lemons, juice of
  • 1/2 cup toasted pine nuts
  • 1/3 cup avocado oil
  • 3 garlic cloves, minced
  • 1 tbsp dijon
  • 3 tbsp white balsamic vinegar
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions
