Sweet Potato Hash
Perfect meal to fuel you for your day!
Ingredients
- 1 sweet potato peeled and cut into 1/2-inch dice 1 medium sweet potato
- 1/2 onion diced 1/2 cup
- 1/2 cup mushrooms diced
- 1 tomatillo diced
- 1/3 cup cilantro leaves diced
- 2 garlic cloves minced
- 1/3 cup black beans (cooked)
- salt and pepper to taste
- 1-2 tbsp oil I used avocado oil
- chili flakes (optional)
Instructions
- Heat olive oil in a large skillet, set over medium - high heat.
- Place sweet potato, onion, mushrooms, minced garlic & tomatillo, cook for 15-20 minutes stirring often till potatoes start to brown.
- Stir in beans and cilantro.
- Dived between 2-3 plates.
- Top with a fried egg & avocado!! Or whatever makes your taste buds sing!
