Ingredients

  • 1 lb asparagus, woody ends removed
  • 2 tbsp fresh lemon juice
  • 1 tbsp white balsamic vinegar
  • 1 tbsp fresh parsley leaves
  • 1 tsp dried oregano
  • 2 tsp garlic powder
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper

To Serve:

  • 1/2 grap tomatoes, halved
  • 1/2 cup parmesan, grated
  • 1 & 1/2 tbsp pinenuts
  • fresh lemon wedges for serving

Instructions

Stove Top:

  1. Start by whisking together lemon juice, vinegar, dried oregano, garlic powder, black pepper, and salt.
  2. In a skillet or frying pan over medium-high heat, add in asparagus. And pour in half the lemon juice mixture. Cook, stirring occasionally, for 5-8 minutes or till the desired doneness.
  3. Drizzle with the remaining lemon mixture and top with cherry tomatoes, parmesan, and pine nuts. Serve immediately with fresh lemon wedges, and enjoy!

Oven

  1. Preheat the oven to 400 degrees F. Lightly grease a rimmed baking sheet and add asparagus in a single layer.
  2. Pour over half the lemon mixture and gently toss and coat the asparagus.
  3. Bake the asparagus for 10 minutes, until it's crisp outside but tender in the middle.
  4. Toss with tomatoes, paremsan and pinenuts. Drizzle with the remaining lemon mixture and serve with fresh lemon wedges. Enjoy!
