Hearing about their day, and really just listening to whatever they want to say or talk about! Our days move so quick, it’s nice to take time to just slow things down even for a short moment. Hearty Sweet Potato and Lentil Salad 🥗 this is Hearty Sweet Potato and Lentil Salad 🥗 this is a perfect spring meal, the weather is warming up and I’m craving all the salads! I love eating this one with tortilla chips and tons of hot sauce 😜 full recipe below! #kayscleaneats 

Ingredients
2 cups sweet potatoes, peeled, cubed and steamed
1 cup quinoa, cooked
1/3 cup white onion, diced
2 cups steamed lentils
1 cup corn kernels
1/2 cup cilantro leaves, diced 
1 avocado, pitted, peeled and cubed 

Vinaigrette

2 limes, juice of
4 tbsp avocado oil
1 garlic clove, minced
1 tsp agave
1/4 tsp chili powder
1/4 tsp cumin
1 tsp salt 

Instructions: 
Combine all sweet potato & lentil salad ingredients in a large bowl.
Add all vinaigrette ingredients to a small bowl and whisk together.
Pour vinaigrette over salad and toss till combined. Serve salad cold, and store in the refrigerator. Enjoy!

Spice Rubbed Flank Steak & Avocado Salsa 💃🏽 Spice Rubbed Flank Steak & Avocado Salsa 💃🏽 this is such a delicious spice rubbed flank steak that is tender, juicy and grilled to perfection. The Avocado salsa compliments the steak and tastes amazing. Wishing everyone a wonderful Monday! #kayscleaneats

Ingredients:
1 tbsp cumin
1 tsp garlic powder
1 tsp chipotle chili powder
1 tsp salt
3 tbsp olive oil
1 lime, juice of
1 tsp soy sauce
6 garlic cloves, minced

Avocado Salsa

1 small jalapeño, diced and seeded
2 Roma tomatoes, diced
1/4 cup red onion, diced
1/4 cup cilantro leaves
1 cup corn kernels
1 lime, juice of 
1/2 tsp salt 
1 large avocado, peeled, pitted, and diced

Instructions
In a large bowl or ziplock bag, add cumin, garlic powder, chipotle chili powder, salt, olive oil, lime juice, soy sauce, and minced garlic cloves. Add flank steak to the Marist and gently massage marinade into the meat, marinate for 1 hour or overnight.
Preheat and oil the grill or grill pan to high heat. Place steak on hot grill and discard the marinade. Sear the steak for 2 minutes on each side then turn down the heat to medium until the desired doneness. Medium rare is 130-135 degrees on a thermometer.
Remove steak from heat and cover with aluminum foil and let rest for 10 minutes while you prepare the avocado salsa.
In a small bowl combine jalapeño, tomatoes, red onion, avocado, cilantro corn, lime juice, and salt. Mix until combined.
Remove foil from steak and slice steak against the grain, top with avocado salsa, enjoy!
