Here is an appetizer everyone will go crazy for! I have a deep love for burrata cheese, it makes its way into every grocery shop I do, haha! Recently I was at whole foods and found the best and freshest burrata ever. The brand is di Stefano, and cheese lovers let me tell you it’s hands down one of the better burrata I have ever had! I am not in any way affiliated with the company its truly just my honest opinion! I mean maybe I should reach out? The world does need more peace and burrata after all!
Burrata with Roasted Tomatoes & Spicy Pesto is best served with fresh baguette sliced and toasted. However, you can always use your favorite dippers or bread. It is a warm appetizer so I wouldn’t recommend making it ahead.


I live in a place where we have ripe juicy tomatoes year around. Use whatever tomatoes you have in a season for this recipe. Any variety of ripe juicy tomatoes will work! If you use large tomatoes just be sure to cut them into 1-inch pieces. Roasted jammy tomatoes are truly a perfect spread of toasts or in your favorite pasta.
This spicy pesto really has so much flavor, I love a dish with a touch of spicy, sweet, and salty. How to make Burrata with Roasted Tomatoes & Spicy Pesto

Start by making your spicy pesto. This is a small batch of pesto so I highly recommend using a small bullet blender or a smaller food processor.

To a medium-size baking dish add the tomatoes, freshly minced garlic, salt, and pepper. Toss and coat the tomatoes, then bake for 30 minutes.
Once tomatoes are roasted top with spicy pesto liberally, I like to have to keep a small amount on the side for those who like an extra kick. Top dish with burrata. Since it’s a hot dish the burrata will melt and become perfect for dipping. Top with flakey sea salt and pepper.

Ingredients
- 20 oz cherry tomatoes
- 1 tsp oregano
- 1 tsp basil
- 2 garlic cloves minced
- 2 tbsp olive oil
- Salt & Pepper to taste
Pesto
- 3/4 cups cilantro
- 1/2 green onion sprig
- 1/2 small jalapeño (seeds removed for less spicy)
- 1/4 cup raw almonds
- 1/4 cup olive oil
- Salt & Pepper to taste
Instructions
- Preheat the oven to 400 degrees F.In a small baking dish add in your tomatoes, basil, oregano, & garlic, salt, pepper toss, and coat.
- Bake tomatoes for 30 minutes.
- While tomatoes bake combine your pesto ingredients and in a food processor or a small bullet blender pulse till smooth.
- Add pesto on top of roasted tomatoes followed by Burrata, salt, and pepper. Serve with warm toast, enjoy!
