Pieces of corn, peaches, herbs, and burrata all come together to make the most delicious summer salad. This salad is fresh, easy to make, and so delicious. Serve it as an appetizer, side dish, or lunch everyone will love it!

This peach, corn, & burrata salad is one of my absolute favorites! The flavors come together so well and it’s such a simple dish to make. I love serving it with trader Joe’s crispy brioche toasts or toasted French bread. It’s truly so fresh and flavorful, just the perfect warm-weather dish.

Summer here in Orange County truly brings is some of the best-tasting fruits. I got a big box of peaches from the market and it’s been a peach extravaganza around here. As I was bringing in the groceries I put the box of peaches on the kitchen floor along with the baby. As I was bringing the bags in the baby managed to take a bite out of almost every peach 😜🤣. So I had to use them quickly before they all went bad!

I whipped up Mini Peach Galettes and this DELICIOUS Peach, Corn and Burrata Salad. The rest of the peaches were halved and shown into the freezer for smoothies since that all had baby bites. Baby Isla is a huge fan of peaches.

The herbs I used in this salad are the ones I have growing in my garden, basil, and oregano. I recommend using fresh herbs they really make this dish so flavorful. Burrata is my absolute favorite soft cheese. It goes so well with this salad. I occsioally like to add soem heat and and sprinkle in some chili flakes. This meal is the best tasting easy recipe you will make this month!

How to Make Peach, Corn & Burrata Salad

Like I said this dish is simple and comes together quickly. Once you gather your ingredient you will chop your peaches into fine chunks. Next, you will defrost your corn if you decide to use frozen corn kernels or remove kernels from the husk. Prepare your herbs by dicing them and combine ingredients in a mixing bowl. Transfer your salad to a serving place and put burrata in the center. Serve with brioche toast or crispy French bread.

Ingredients

  • 2 peaches, diced
  • 1 cup corn kernels
  • 10 basil leaves, diced
  • 10 oregano leaves, diced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Brioche toasts for serving

Instructions

    1. 1. Add the peaches, corn, basil, oregano, salt and pepper to a bowl and mix till combined.
    2. Add to serving plate with Burrata cheese, top with black pepper if desired, and serve with toast or a favorite bread. Enjoy!
