We have been living off super easy meals lately! Life is so crazy right now. Nothing could have prepared me for an 18-month-old and a 2-month-old. How To Make Baked Chicken Taquitos and Chipotle Crema

We love that this recipe is so quick and easy to make. They make the perfect appetizer or meal. Here is how I make them:

  • Preheat the oven and prepare your baking sheet with cooking spray
  • Mix the cooked shredded chicken, spices, green chilies, and cheeses.
  • Heat the corn tortillas. Fill tortillas with approximately 2 tbsp chicken mixture in the center and spread out lengthwise. Roll up and set it seam-side down on the prepared baking sheet.
  • Bake taquitos for 20 minutes.
  • Add crema, chipotle pepper, garlic clove, lime juice, and salt to a blender.

Can You Freeze Taquitos?

The chicken mixture freezes very well! Place in a freezer-safe ziplock bag and squeeze out as much air as possible. When ready to use them, pull them out of the freezer and let them thaw completely.

Baked Chicken Taquitos

Ingredients

  • 2 & 1/2 cups shredded chicken
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp chili powder
  • 1/2 tso dried oregno
  • 1/4 tsp smoked paprika
  • 1 lime, juice of
  • 3/4 cup jack cheese, shredded
  • 3 ounces cream cheese
  • 20 corn tortillas, taco size

Chipotle Crema

  • 3/4 cup Mexican crema
  • 1 chipotle pvepper from can
  • 1 garlic clove
  • 1 lime, juice of
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 425 degrees and prepare your baking sheet with cooking spray, set aside.
  2. In a large bowl mix together the cooked shredded chicken, spices, green chilies, lime juice, and cheeses.
  3. Heat the corn tortillas. Fill each tortilla with approximately 2 tbsp chicken mixture in the center and spread out lengthwise. Roll up and set it seam-side down on the prepared baking sheet.
  4. Bake taquitos for 20 minutes.
  5. To a blender add crema, chipotle pepper, garlic clove, lime juice, and salt.
  6. Serve taquitos with shredded lettuce, pico, and chipotle crema.

Notes

We love serving guacamole taquitos. Add your favorite dipping sides.
