Before we set out on these amazing baked chicken legs I want to announce that the baby is here!!! Baby Luca arrived on March 18th, and I’ve fallen off the face of the internet since then! A toddler and a newborn… it’s just wild here, plus my older two (9 & 7) but luckily they are a bit easier! I am so excited to be back sharing recipes and also my crazy family life here with you!! I am officially a mother of 4, so wild!! Life is crazy, the house is messy, and most days I don’t even have time to sit between my 16-month-old and my 2-week-old!

I’ve made these chicken drumsticks over and over, my kids love them. Drumsticks are fairly cheap too compared to other cuts. With the inflation, we are experiencing we have been cutting back a bit on meat. Don’t even get me started on gas prices. I cringe every time I am at the pump.
These baked chicken legs marinating in a fresh herb marinade that you’re going to want to put on everything!! Veggies, fish, steak, trust me it’s good. But, my favorite way to eat it is on these chicken legs, you can’t go wrong with lemon, garlic, and herbs as a marinade.
Baked Chicken Legs Ingredients
- 6 large basil leaves
- 1 cup parsley leaves
- 5 green onion sprigs, stem removed
- 1 tbsp dried oregano
- 1 lemon, juice of
- 3-4 garlic cloves
- 1 tbsp white balsamic
- 1/4 cup olive oil
- 1 & 1/2 tsp salt
- 1 tsp pepper


Seriously The Most Delicious Marinade…
Put this on your veggies, seafood, steak… it is so delish!!
Do not blend it.. it needs to be finely chopped or what is easiest is a food processor. You want a chimichurri style consistency.

Delicious Baked Chicken Legs (Drumsticks)

These easy Baked Chicken Legs will be a hit in your household! Chicken Drumsticks are marinated in the most delicious chimichurri style marinade and then baked to golden brown perfection. This dish is a perfect weeknight meal the whole family will love.
Ingredients
- 6 large basil leaves
- 1 cup parsley leaves
- 5 green onion sprigs, stem removed
- 1 tbsp dried oregano
- 1 lemon, juice of
- 3-4 garlic cloves
- 1 tbsp white balsamic
- 1/4 cup olive oil
- 1 & 1/2 tsp salt
- 1 tsp pepper
- 9-10 chicken drumsticks (roughly 4 lbs)
Instructions
- To a food processor add basil leaves, parsley leaves, green onion sprigs, dried oregano, and garlic cloves. Pulse in short burst roughly 10 times, until everything‘s chopped.
- Poor in lemon juice white balsamic vinegar olive oil salt and pepper. Pulse for another 3 to 5 seconds.
- Set aside 3 tablespoons of the mixture.
- Place chicken in a bowl or Ziploc bag and poor herb mixture over. Toss and coat the chicken till it is covered in herb mixture. Transfer to the fridge and let marinate for 1 to 24 hours.
- Preheat the oven to 400 degrees F. Spray a lined baking sheet with cooking spray.
- Layout the drumsticks in one even layer and bake for 50 minutes flipping halfway through.
- Remove the chicken from the oven and brush with the remaining Herb mixture. (Season with more salt to taste if needed).
- If your chicken has not browned enough you can broil for the last 2 minutes. Enjoy!
